How do I cook the chicken is it pre-cooked first? I have no idea!

Ingredients For Chicken Casserole:


65g Butter/margarine
1 finely chopped onion
125g sliced mushrooms
2 finely chopped celery sticks
400g tin of tomatoes
4 chicken joints
225g long grain brown or white rice
600mls stock
1 teaspoon of sugar
1 teaspoon mixed herbs


Cooking Directions For Chicken Casserole:


1. Melt the butter in a pan and then brown the chicken pieces. Drain off the fat and place the chicken into a casserole dish.


2. Fry the onion, rice and celery for about 4 minutes then add the tomatoes, stock, sugar and the herbs. Bring to the boil whilst stirring.


3. Pour the mixture over the chicken, cover the casserole dish and cook at 400f, 200c or gas mark 6 for about an hour.


4. Heat the remaining butter and fry the mushrooms for 2 minutes before adding to the casserole.

There are different ways. If the other ingredients aren't cooked the chicken doesn't have to be either. Ao, you can use chicken breasts that are pounded to make them even, not too thick on one end, layer in caserole dish add a can of cream of chicken soup with half a cup of water and a cup of rice into the caserole dish. Bake in oven for 45 mins. coveren at 350 and check the rice for doneness, then add shredded cheddar cheese at the end until melted.
Or. Cooked chicken can be put into a caserole dich, add broccoli...thawed, mix a can of cream of chicken and a small container of sour cream mixed on top, spread around, mix box of stuffing mix any flavor with the butter and seasoning, no water, then put on top of caserole and press down, bake for 30 min on 350 until edges are lightly golden, uncovered. Cool a little and serve. You can mix the veggie, green beans will do. this is great left over and reheated later. Good luck.

I make an awesome Shepard's Pie!

Bake for 1 hr @ 350, 2 or 3 breasts in Olive Oil, Balsamic, and little bit of sesame oil with onions & garlic. That way the onions and garlic are roasty.Yummy!

Steam some veggies. Costco has a really good frozen mix called Normandy with broccoli, caulifower, carrots & squash. Very colorful & yummy.

Chop up all of that (veggies & cooked chicken) in the chicken baking pan so it mixes all that yummy stuff, juice and all.

Cover it with mashed potatoes and bake it for another 1/2 hr or so.

This recipe takes awhile so it's not for a weeknight! But it is so yummy!!!

Easy get three or four chicken fillets and cut them into chunks or buy a pound of diced chicken dry fry it for five Min's transfer it into a casserole dish chop your vegetables up add to chicken add some stock cubes and thickener and hey just pop it into the oven for an hour.

Go out and buy COLMANS CHICKEN CASSEROLE mix, its straight forward and its gorgeous, you put the cicken breats into casserole dish raw, add carrots and onions etc.. mix the mix with water and add it to the dish, stick it in the oven and cook for 1 1/2 hrs, boil some spuds and you have a lovely tasty meal, delicious

This is what I do. Like with any recipe, there would appear to be as many recipes as there are people who cook it! I enjoy mine, and so does my mother - who is not the easiest to please!

Chicken pieces - skin on, browned. I use chicken thighs as they are, in my opinion tastiest and an even size.
Carrots - peeled and chopped
Leek - chopped
Onion - chopped, roughly
Garlic - "" ""
Mushrooms " ""
Tarragon - dried or fresh to taste
Salt and Pepper ""
Chicken stock cube or Bovril mixed with water, or bought ready made stock. Marks and Spencers and Tesco, both do good ones
Lemon Juice
Mushroom ketchup (optional)
White wine or grape juice if you object to the alcohol for some reason.

Chop vegetables as described.

Brown the chicken pieces and put into casserole. If you use a slo-cooker, put the vegetables in first.

Make up the stock and add to the casserole.

Add seasonings and herbs.

Cook on 180 for about 1 3/4 hours, checking the liquid occasionally or cook on slo- in the preheated slow cooker. I prefer the slo method myself, chicken will be tender, falling off the bone.

Add a form of thickener - ie cornflour, potato flour, and the other one whose name temporarily evades me.

Serve with boiled or mashed potato and a salad of your choice.

Enjoy. Comfort food at its best!!!!

Use chicken pieces with skin and bones, never just breast. Make sure that you brown the chicken pieces in a little butter or oil before adding any stock. Then add your other ingredients and cook for about and hour to an hour and a half.

This is from the Kraft website, I've made it a dozen times and is sooooooooooooooo easy..........I hope you enjoy it as much as we do.........


1 can (14-1/2 oz.) diced tomatoes, Italian Style is best,undrained
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. dried basil leaves
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese



PREHEAT oven to 400°F. Place tomatoes in medium bowl. Add stuffing mix, water and garlic; stir just until stuffing mix is moistened. Set aside.
PLACE chicken in 13x9-inch baking dish; sprinkle with the basil and add salt, pepper and garlic powder and cheese. Top with stuffing mixture.
BAKE 30 min. or until chicken is cooked through.

Oh please....come on folks...why the long drawn out recipes......?

The whole idea of a casserole is whatever you fancy in it.....a bit like a stew!
Just brown your chicken first, throw it in your pot with seasonal veg, chicken stock and put it in the oven....150c/ gas4 for 2-2.5hrs......for a bit of extra flavour, .25 bottle wine...red/white...you choose!

Don't over complicate it!
