CHICKEN FAJITA PIZZA:
2 whole chicken breasts, skinned, boned, cut into 2 x 1/2 inch strips
1 tbsp. olive oil
1 to 2 tsp. chili powder
1/2 to 1 tsp. salt
1/2 tsp. garlic powder
1 c. thinly sliced onions
1 c. green or red bell pepper strips
1 can (10 oz.) refrigerated pizza crust
1/2 c. prepared mild salsa or picante sauce
8 oz. (2 c.) shredded Monterey Jack cheese
In large skillet over medium-high heat, stir fry chicken in oil for 5 minutes or until lightly browned. Stir in chili powder, salt and garlic powder. Add onions and green pepper. Stir fry an additional minute until vegetables are crisp-tender.
Heat oven to 425 degrees. Grease 12 inch pizza pan or 13 x 9 inch. Unroll dough and place in greased pan, starting at center, press out with hands. Bake at 425 degrees for 6 or 8 minutes or until very light golden brown. Spoon chicken mixture over partially baked crust. Spoon salsa over chicken, sprinkle with cheese. Bake 14 to 18 minutes until golden brown.
Gourmet Chicken Pizza:
2 skinless, boneless chicken breast halves
1 (10 ounce) can refrigerated pizza crust
1/2 cup Ranch-style salad dressing
1 cup shredded mozzarella cheese
1 cup shredded Cheddar cheese
1 cup chopped tomatoes
1/4 cup chopped green onions
Preheat oven to 425 degrees F (220 degrees C). Lightly grease a pizza pan or medium baking sheet.
Place chicken in a large skillet over medium-high heat. Cook until no longer pink, and juices run clear. Cool, then either shred or chop into small pieces.
Unroll dough, and press into the prepared pizza pan or baking sheet. Bake crust for 7 minutes in the preheated oven, or until it begins to turn golden brown. Remove from oven.
Spread ranch dressing over partially baked crust. Sprinkle on mozzarella cheese. Place tomatoes, green onion, and chicken on top of mozzarella cheese, then top with Cheddar cheese. Return to the oven for 20 to 25 minutes, until cheese is melted and bubbly.

Here goes: 1 Boboli thin crust ready made pizza crust
1 jar Cheese and Garlic Alfredo Sauce
1 package Alloutte Garlic and Herb Cream Cheese
1 Rotisserie Chicken from the deli
Shredded Jack and Parmesan Cheese
Heat oven to 400 degrees. Spread Alfredo Sauce on crust and put cream cheese on by spoonfuls. Shred rotisserie chicken and throw away the skin. Place on crust and top with cheese. Bake approximately 12-18 minutes or until bubbling

Buy the premade crust, packaged cheese, canned pizza sauce unless you make your own, premade chicken pieces from freezer section or make your own from a whole chicken baked or cooked in crockpot and divided up for more meals and olive oil. Put the olive oil on the crust, layer the sauce, chicken the cheese, pepperoni if desired, any condoments like peppers, onions, mushrooms, sprinkle a little oregano, garlic powder if desired...then sprinkle with parmesan cheese if desired, bake on 350 until the cheese is melted and the pizza is lightly brown around edge. Great pizza, little trouble if prepared ahead of time. you can make your crust or buy it from a pizza restaurant, they will sell it most the time. Good luck. Quick small ones can be made on english muffins too.

There is a very simple recipe for dumplings. One cup flour. Add water and make a dough. take table spoon sized amounts and drop into a pot full of boiling water with a touch of oil. Boil until cooked. Test with a fork to decide if it's cooked. Add dumplings to the chicken dish and serve. Also use dumpling is stew and other dishes as well. A nice filler and a good way to pad out a meal.

get a boboli crust, put bbq sauce on instead of pizza sauce, add finely diced fully cooked chicken pieces, finely chopped red onions and finely sliced green peppers, top with a low fat mozzarella cheese (or mozzarella/cheddar blend) and you have a yummy and healthy chicken pizza~!!!
