Does the HDMI CABLE for the ps3 really change the video output to 1080I?

That's not the HDMI Cable's job.....that's the Sony PS3's job to output the selected resolution from the menu/setup....

HDMI's job is to deliver a digital signal to your TV, and that's all it's supposed to do.....

Component Cables will do the same resolution as HDMI, but it delivers it as Video not Digital......

The cable itself does not do any conversion.
You can send 1080i via either HDMI (digital) or component cables (analog).
