It's the manner in which they cool down. If they cool down slowly on the outside and the inner egg is pressed against the shell, then that part of the egg will stick to the shell while the rest of the egg pulls away from the shell as the inner egg contracts. To avoid this happening, immerse the eggs immediately in cold water and turn occasionally while they cool. That way no one part of the inner egg remains in contact with the shell long enough to stick to it.

The fresher the egg, the more difficult it is to peel There is a thin membrane that surrounds the in side of the shell. When an egg is very fresh, this membrane can drive you crazy.. Like trying to peel glued on rubber. One trick is to keep the eggs slightly warm while peeling, and use a thin stream from the faucet to help it along. Another is to allow the eggs to cool. Then drop into medium hot water to warm them, Good Luck!

Iknow if you immediately plunge the hot cooked eggs into cold water and then refrigerate them the shells will come off in a few pieces instead of some sticking to the egg itself.
In answer to your question, maybe that has something to do with heat and cold.

newly laid eggs for some reason are difficult to Shell,avoid peeling eggs while still hot,cool either in water or chill a while,if you are really in a hurry,then try this, tap the shell gently on the counter in several places,roll between the palms of your hand to loosen,gently lift a bit of shel,if this comes out freely then you can proceed using this layer as a guide.

I don't know why but to solve the problem, soak the eggs in ice water after they are fully cooked. The shells slip right off.

It depends on how old the eggs are. Fresher eggs stick worse (or so I have been told) that older ones. A lot of cooks will not use cold or fresh eggs.
