For preschoolers? Get some little cookie cutters (about 1 inch wide), and cut out shapes from sliced ham and sliced cheeses, then put on top of the crackers. Add some with a slice of pickle or a half of tomato on top of cream cheese (the cream cheese keeps the veggie juice from soaking into the cracker). Have some peanut butter and jelly crackers out, too. Put on a couple of large plates, and let the kids at them.
BTW, this is a great "craft" for kids to do, too. You can provide the cookie cutters and small bowls of cream cheese, peanut butter, jelly, pickle slices and halved tomatoes, and let them make their own crackers. However, it can be messy.
Heart cookie cutters would be terribly cute!

buy some ritz crackers or some other flat-ish tasty crackers (kids dont like anything too fancy),
get some whipped cheese in a can, spray either
a) all over the cracker
b) in a spiral
c) smiley face!!! =D
OR buy packaged deli sliced cheese from supermarket (kids like cheddar, american, and mild swiss cheeses) and then cut into squares to fit the crackers.
FINALLY lay like 12 of them out in a tray, and create a cool looking sign displaying them.

Since kids are cool..they like cool things.
Try using different shaped cookie cutters to cut out from slices of deli-sliced cheese. Don't unwrap cheese-food slices...too
sticky, and thin, they'll fall apart. I'd suggest getting mild cheddar and maybe mozzarella or Muenster in slices. Don't put it on the crackers until you're almost ready to serve or they will get soggy.
If you can find heart shaped cookie or jello cutters that would be great! Good Luck

preschoolers? not sure how many will eat pickles or tomatoes but use those fun shaped crackers (dinosaurs, bears...). Definitely orange cheddar (not sharp but mild) & maybe a monterrey jack (or colby). The simpler the better, nothing fancy or adult tasting (goat cheese, brie, bleu...). also some seedless grapes & a few slices of apple should do the trick.
you could also use those cheeses that come in dino, sun, moon & stars shapes (sargento makes them)

I'm wondering if it's easier for them to eat a cube of cheese or some of those goldfish crackers.that come in different flavors...so they won't choke as easily. You might want to ask someone who works with little preschoolers so you bring something safe.
Whatever you serve them make sure you know if some have allergies...I would not serve peanut butter since many children are allergic to it. good luck and you are great to treat the kids they will always remember you for your sweet ways...

just get several kind of cheeses and different kind of cracker and put them on a platter. You might want to put some kind of fruit on there to such as apples or grapes.
