Coconut and Bendi Fry

Ingredients:

Bendi
Coconut half cup
Chilli powder according to taste
Salt according to taste
Cashew few (Optional)
Oil to fry

Method:

1. First wash the bendi and spread it on a paper so that it's dried.
2. Cut them into small slices (round).
3. Keep oil in kadai and deep-fry them till they become crispy.
4. Next deep-fry coconut also same way till they turn golden brown.
5. Next deep-fry cashew nuts and add them to bendi and coconut.
6. Heat 1 tsp. of oil in pan; add mustard when oil is heated. Then add channa dhal and urud dhal for seasoning.
7. Then add above mixture, salt and chilli powder and mix properly. Heat it for some time till raw smell of chilli powder is gone.

Note: You can use iron mesh or jallari to fry coconut so that you don't have to use lot of oil.

A very simple preparation: Wash the bendy, dry them and then cut into thin slices. Heat oil in a kadai and season with mustard & udin dhal, add some curry leaves and sliced green chillies, then add the cut pieces of bendy. You can add some jeera powder and haldi for flavor if required. Fry the bendy in medium flame. When half fried, add salt to taste and fry in low flame till fully fried. Fry the bendy in open pan or kadai, don't close the pan.

Not bendy fry but i can tell you about bendy dry....
1.Heat the oil,put mustard,cummin seeds and green chillies till splutter.2.Add cut bendi mix, cover for 2-3 min on high flame.3.Uncover it...simmer.Add turmeric,amchur powder,salt and dhania powder.4.Again saute it on high flame for 4-5 min.
5.You can also put some khus-khus or til in it.

Your delicious bendi is ready.

Masala bhindi Fry

/2 kg okra (bhindi)
1 piece coconut (dry one would do)
2 onions
4 tablespoons sesame seeds
2 tablespoons dhaniya powder
4 cloves garlic
1 piece tamarind pulp (or Vinegar)
red chili powder
turmeric
oil (for frying)
salt
coriander leaves

Wash the bhindi; clean it with a dry cloth till its totally dry.
Give strokes (don't cut) lengthwise and keep aside.
Fry ingredients#2 to#6 in a pan in a 1/2 spoon of oil.
Grind everything except bhindi, of course.
(Masala's ready!) Stuff the masala carefully in the bhindi, make sure they don't split into two pieces.
Fry them in a pan with a spoon of oil (not much of it).
Simmer the gas.
Put the lid and cook for 5 minutes till bhindi is tender.
Take off the lid and fry till brown and crispy.
Garnish with coriander leaves.
