You may be thinking of

Erich Hartmann

of the German WWII Luftwaffe. His confirmed kill exceeded 350 kills; a good percentage of them occurred on the Russian Front.

This question really has no definitive answer.

Barron (Freiherr) Manfred Von Richtoffen is probabloy the most famous.

Eddie Rickenbacker was also very famous and the most successful allied pilot to survive the war. (He also founded an airline...)

There's a list of great pilots several pages liong from WWI, Korea and Vietnam eras. Each has many reasons to be named the best.

Chuck Yeager is one of the most famous, but he had relatively little combat experience. Mostly known for his speed records in the X-plane project.

Bob Hoover is another example of excelence in Aviation... He got very little combat flying because he was so outstanding at flying planes they sent him around to demonstrate how to properly fly many different aircraft SAFELY and to get maximum performance at the same time. Probably one of the 5 best pilots to ever sit in a cockpit. (#1 in my book)

The entire "Tuskegee Airman" fighter group. They collectively set a record that is impossible to beat. NO bomber they were escorting was lost to enemy fighter action. If there was a red tailed P-51 near the bomber... the German fighters turned around and ran for thier lives. They shot down several jet fighters with the prop driven P-51's with out losing a plane to the jets....

The list goes on... quite an honor roll.

Douglas Bader. He flew for the RAF in WWII. Despite losing both legs in a pre-war flying accident he signed up with the RAF as a fighter pilot and flew regular missions. He was eventually shot down and captured in 1941, but still managed to escape and torment the Germans until in the end they took his artificial legs away at night and eventually, because he was so much trouble, the Germans sent him to Colditz - considered the most escape proof prisoner of war camp in Europe.

Erich Hartmann, Luftwaffe (1922-1993), the Blonde Knight of Germany with 352 confirmed kills.

Opinions might follow saying that he massacred inferior aircrafts and all, but the fact remains that he did that in 825 missions including a scourge of 172 victories in one year.

And he believes that his greatest achievement was that he never lost a wingman.

This is a very difficult question to answer, the Germans tended to exaggerate, so I would not include them. J. Johnson was a Canadian who flew with the RAF and was the credited with the most victories of all allied pilots,I can't remember how many.Correction he was a Brit who led a Canadian squadron during the Battle of Britain.
