500mg? then why are there pills that are 1000mg or higher? i just bought some 500 mg about 10 min ago.

Generally, the upper limits of Vitamin C for an adult is 2000 mg per day. Remember, the upper limit is not the recommended dosage, rather it's the highest amount that scientists have found you can take without causing any known health risks.
In the U.S., the recommended dietary allowance (RDA) for vitamin C was recently revised upward from 60 mg daily for men and women. Women should consume 75 milligrams per day, and men should consume 90 milligrams daily. The RDA continues to be based primarily on the prevention of deficiency disease, rather than the prevention of chronic disease and the promotion of optimum health. The recommended intake for smokers is 35 mg/day higher than for nonsmokers, because smokers are under increased oxidative stress from the toxins in cigarette smoke and generally have lower blood levels of vitamin C.
The amounts for disease prevention may be higher. However, the body of research around mega-doses is still being developed. Check out the link below from Oregon State University for some additional information on research and studies around larger, disease prevention doses.
Finally, remember that it's better to get your Vitamin C (and all vitamins, for that matter) from the food you eat, instead of a supplement pill. There is a growing body of evidence that suggests that in many cases there are complex synergies and interactions between vitamins and other compounds in food that actually produce greater health benefits than consumption of the vitamin alone. Supplements are okay, but strive to eat whole food as well for maximum benefit.

Vitamin c is good for one thing: preventing scurvy. It doesn't make you healthy, resistant to colds or whatnot, maintaining all your vitamin levels does that. Have you or a family member ever had scurvy? If no, then just eat an orange every once in a while.
EDIT
500 MG is perfectly safe, just don't take a handful of those at a time. I've finished off bags of oranges and cases of sunny D before in a few hours, nothing bad will happen. Only way you'll get a kidney stone or something is if your sick with a disease. You'll just piss away the excess.

1000 MG. twice a day is very safe, or as you have, 500 Mg. four times a day with meals. Very important vitamin and being water soluble, (unlike Vitamin A & E) non toxic at that dose.If you smoke, you could even take another 500-1000MG. per day. Your body wll absorb what you need and rid the excess, if any. Peeling one orange would never be enough!

max amount per day shouldn't exceed 2000mg.
toxicity (poisoning) is rare but anything over the 2000 limit could result in diarrhea and severe stomach cramping along with nausea and vomiting
