No reason why they shouldn't--it's just a phrase.
Christians and Jews are the ones who shouldn't be saying it, since one of the Ten Commandments forbids using God's in vain.

I don't. I also don't say "thank heaven" or "what the hell" or "bless you" or anything else like that. There are other words and phrases that can express a particular thought without being having religious connotations.

Can someone who is celebate say, "F*** you!"?
Can someone who doesn't believe in hell say, "D*mn it!"?
I think language allows for more flexibility than Christian dogmatism.

but its easier to say oh my god than to say oh my science!
