Lobster is real easy to prepare. The best way is to boil it with a little seasoning. You local market will probably sell Zateranes fish boil tha is great and bagged so you just toss it in the water and go. It only takes roughly 5 minutes to cook lobster. As to preparation, you can thaw them in the refrigerator for 8 to 10 hours or in a microwave oven (especially if it has an auto-defrost setting). You can cook them frozen, but they tend to be more tender if thawed first. Many people would broil them, but it's hard to keep sections from overcooking. You can bake them in a 400°F (205°C) oven for 8 to 10 minutes (if they were thawed in advance; longer if frozen). Brush them with a bit of butter or olive oil before they go into the oven. Serve with lemon juice, butter, or a fancier sauce such as hollandaise or beurre blanc.


You can also steam the tails for about 5 to 7 minutes. They will curl up as they steam, so for the sake of presentation, you might like to run a wooden skewer through the length of each tail. The steaming liquid (a cup is enough) can just be water, but if you use white wine, you could also use it to make a sauce when the lobster is done. Reduce the liquid in a saucepan and add a few tablespoons of tarragon, parsley or chervil and finish the sauce with a little butter or cream.

You can also grill them (oil the grill surface first to keep them from sticking), but it will take a deft touch to keep them from drying out. There are other options, too, after you steam or bake them. You can make a delicious lobster stew or bisque. Or put them in the refrigerator to cool and make a huge lobster salad.

Or do what the Mainers do (with Maine lobster) — cool them, cut up the meat, add a little mayonnaise, plink the mixture in store-bought hot dog buns (a slice of lettuce is optional) and feast on what we call lobster rolls.

Citrus-Buttered Lobster Tails:

16 ounces frozen lobster tails (2 lobster tails)
1/2 cup water
1/4 cup butter or margarine
1 tablespoon lemon juice
1/2 teaspoon orange rind, Finely Shredded
1/8 teaspoon salt
1 dash ginger, Ground
1 dash paprika

1. Place frozen lobster tails in a shallow baking dish.
2. Micro-cook, covered, on 30% power for 7 to 8 minutes or till thawed, rotating dish a quarter-turn once.
3. The tails are thawed when the shells are flexible enough to bend.
4. Using a heavy knife, cut through the center of the top shells.
5. Continue cutting through meat but not through undersehells.
6. Spread the tails open, butterfly style, so meat is on top.
7. Return to shallow baking dish.
8. Pour water atop.
9. Micro-cook, covered, on 50% power for 6 to 8 minutes or just till meat is opaque, rotating dish a quarter-turn every minute. (Shield cooked meat with small pieces of foil, if necessary, to prevent overcooking.) Let stand, covered, for 5 minutes.
10. Meanwhile, combine butter or margarine, lemon juice, orange peel, salt, ginger and paprika.
11. Micro-cook, uncovered, on 100% power for 1 1/2 to 2 minutes or till butter is melted.
12. Mix well.
13. Drizzle lobster tails with butter mixture.

No, no, no...the BEST wasy is to BROIL them on a baking sheet or glass dish and baste them with butter towards the end and sprinkle with a little bit of paprika. Do not overcook or they'll become rubbery. Depending on the size of the tails is how you determine how long to cook them. Ask the seafood market counter guy.

STEAM IT THEN IT WONT GET ALL SOGGY AND WILL KEEP ITS FLAVOR. MAKE SURE U COOK IT LONG ENOUGH BUT DONT OVER COOK IT EITHER. THE TAIL WILL TURN RED AND THE MEAT WILL BE FLUFFY WHITE.
