I love the bran muffins from McDonald's (yes, don't knock them unless you've tried them) and I have perfected my own recipe. The McDonald's muffins have sort of a crispier top. Mine don't. Does anyone have a hint or something to try to get this crispier crust on the top?

I've never had them either but I did find this imitation recipe online. Have you tried sprinkling the top before baking with maybe crushed bran flakes or a cinnamon and brown sugar mix?

BRAN MUFFINS (McDonald's)

3 cups buttermilk
3 eggs
1/3 cup oil
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
1 cup sugar
3 cups bran flakes, slightly crushed
3 cups flour

Put first ingredients through blender on high speed for 20
seconds. Pour into bowl and beat in remaining
ingredients at low speed on mixer until completely
mixed. Cover and refrigerate 24 hours. Fill greased
muffin well almost full and bake at 400 degrees for 20 to 25 minutes
or until cracked on top and a toothpick inserted in
center comes out clean. 1 tb plumped raisins can be
added to each well of batter before baking.

Pre heat your oven and cook them at a slightly higher temperature maybe bump the temp by 25 degrees. Thier muffins are baked, frozen and rebaked. You don't actually think they make stuff from scratch.

I would add some sugar to the top of the batter before putting them into the oven to bake. I wouldn't try putting them under the broiler or else you may have a burnt extra crispy charcoal muffin.LOL

When you've finished baking them, try sticking them under the broiler for maybe 30 seconds. In baking, cripsy generally means more heat.
