My nona's Italian Meatballs

1 pound of ground beef
1/3 pound of ground pork
Salt and pepper
1 egg
some virgin olive oil

mix egg and meat together until you can't tell which meat is which. season with salt and pepper and leave for 15 minutes.

Then shape into small balls and put them into a pan with the oil.
Brown them until all sides are firm enough to stay together.

Then put them into a simmering spaghetti sauce for a few hours to cook through. Adds flavour to both.

BEST SPAGHETTI SAUCE

3 cans of roma tomatos
salt
1 medium onion
5 cloves garlic
pepper
fresh basil
rosemary
tomoto juice
1 8oz can tomato paste
a food processor

take tomatos and put them into food processer until fine.

Heat some olive oil in a large pot.
Put the 5 garlic cloves in until brown. Remove garlic and throw out. Now you have garlic olive oil. Add onion untill all is soft. Use a low medium heat. Add rosemary halfway through.

Add tomatos, juice and paste. Heat until it boils. Then, let simmer on like "1.5-2" or so on the oven. Add few leaves of fresh basil. Stir

Add the meatballs. Stir.

Add the salt and pepper. Leave.

Taste every hour or so. Good to let si\mmer a total of 6 hours.
BEST FLAVOR: put into fridge 24 hours let flavors mix. Then reheat for next days dinner. Serve over your favorite pasta.

Blessings
David

1. Combine 1.5 pounds of ground beef with 1 cup bread crumbs, 1 egg, 1 scant tsp of salt and fresh ground pepper in a large bowl. For additional flavor, add 0.5 pounds of italian sausage, 1 tablespoon each of garlic powder and basil.
2. Mix ingredients together by hand, making sure to combine and distribute the bread crumbs throughout.
3. Using an ice cream scoop (or large teaspoon), scoop out a serving of the mixture, and pat it into a round shape.
4. Place meatballs on a baking sheet and cooling rack. The goal is to provide a place for the fat to drip away from the meatballs.
5. Cook in a 350 degree oven for 20-30 minutes.

Tips

* You can season these up anyway you want. Add Worcestershire sauce, ketchup, chili sauce (cocktail sauce), anything. If your mixture is too wet just add a little more bread crumbs.
* Some like to bake the meatballs but you could pan fry them, deep fry them or slow cook them. If you slow cook them you might want to brown them in a pan first and then cook them in a tomato sauce in the slow cooker.
* You can try using other ground meats like chicken, turkey or pork or a combination.
* A fun use of meatballs is to wrap them up in bread dough (made from scratch or use frozen) and then bake. Great finger food for kids and parties.
* Parmesan cheese and finely chopped parsley is a great addition to meatballs. For tender juicy meatballs add 1/2 a cup of applesauce. you don't tast the apple but it balances the salty and sweet flavors and it makes the meat very juicy. If the mixture gets too wet, add a little more bread crumb.

Pasta. Their easy. I think you just mix ground beef with some (egg to make it hold togather) Minced onions are good then form into balls and fry them up!
