Last time I had chateaubriand with onion flavored potatos and mushrooms.

Starter was cucmber and tomato salad with vinagrette.

Dessert was warm fudge brownie with vanilla ice cream and strawberries on top, with warm chocolate sauce on that.

NOW, I need another great menu, with a main course, starter and dessert.

You can't go wrong with this:

Starter: Soup
Clear chicken broth with small egg noodles and a touch of parsely. Serve with heavy fresh bread and butter.

Intermediate: Salad
Cold Plate of; Halved hard-boiled egg (covered with light mayo...) chopped chicken livers with minced onion and crackers, a few radishes or Greek olives, a few scallion onions.

Main Course: Roast Lamb Shanks
Pre-baste(brown) lamb shanks with diced garlic and butter, place in a roasting pan with sliced white mushrooms, 1/2 cup red wine, (2) carrots, (2) celery, and let roast until golden brown.
Serve on a large Meat Platter and pour some juice over the lamb to keep hot. (You may as an alternate - Pour pre-prepared beef gravy over the lamb and mushrooms....)

Dessert: Serbian (Turkish) Coffe or Expresso served with a French cordial like Orange Liqueur or Grand Manier.

1st course - Minestrone soup and a good bakery bread or home made bread (I like to use an herb bread)

Here's my recipe if you don't have one (I'm the type of cook who likes to season by taste, so sorry that the spice measurements aren't exact)

Minestrone

1/2 box macaroni shells
1 Large can tomato sauce
2 cups sliced or cubed ham
1 beef bouillon cube
Italian seasoning, onions or onion powder, oregano, and basil

Simmer these ingredients together unitl macaroni is cooked then add:

1 can sliced carrots
1 small can peas
1 can red beans or light red kidney beans

This soup always tastes better reheated the next day. It also works out very well in a crock pot.

2nd course - Chicken Cordon Bleu served with Garlic mashed potatoes and salad

There are a lot of good recipes for Chicken Cordon Bleu on the internet, I can't find the one I used, but it's not that hard to make and seems very elegant.

Dessert - Pick one - I get huge compliments and requests for recipes every time I make either one of these desserts. ( I would go with the rum cake, it's the most popular!)

Custard Pie

2 tsp unflavored gelatin (dissolve into 2 tblsp of water)
2 cups milk
4 tblsp cornstarch
1 cup sugar
½ tsp salt
6 egg yolks, beaten
2 tblsp butter
1 tsp vanilla
2 tblsp brandy or rum (or use extracts)
1 8 oz container of coolwhip or 1 package prepared dream whip

Heat milk in heavy bottom pan on low. Add sugar, salt, butter and dissolve.
Mix cornstarch into egg yolks and add to milk. Cook until very thick. Remove from heat and add dissolved gelatin, vanilla, and liquor. Let cool. When cold, fold in cool whip or dream whip. Pour into pie crust and sprinkle nutmeg on top. Refrigerate.


Rum Cake

1 yellow cake mix
1 box instant vanilla pudding mix
4 eggs
1/2 cup oil
1/2 cup water
1/2 cup rum

Mix all ingredients and pour into a buttered and floured bundt pan. Bake at 350 for about 45 minutes. It depends on the oven.

About 10 minutes before the cake is ready to come out of the oven, start making the glaze.

Heat in a medium saucepan:

1 stick butter
1cup sugar
1/4 water
1/4 cup rum

Let this boil for 3-5 minutes. Then turn off heat.

When the cake comes out of the oven, turn it out of the pan immediately and pierce holes all over it with a fork. Spoon the glaze over the cake while both cake and glaze are very hot. Keep spooning glaze over cake until it has all been absorbed.

For Desert maybe a nice

Peach Cobbler, or Blueberry Cobbler
