Justin Wilson's Hush Puppies
2 c Cornmeal
Ground cayenne pepper
1 c Plain flour
2 Eggs, beaten
1 ts Baking powder
1 c Buttermilk
1 ts Salt
1 c Green onion, finely chopped
1/2 ts Soda
2 tb Bacon drippings, hot
1/2 c Parsley, finely chopped
1/2 ts Garlic powder (to taste)
Deep fat for frying
Combine all dry ingredients. Add eggs, buttermilk, onions, and oil or
bacon drippings. Mix well. Drop in deep hot fat by spoonfuls and brown on
all sides.

Southern Hush Puppies
4-5 servings 20 min
vegetable oil
1 1/2 cups white cornmeal
1/3 cup flour
2 tablespoons baking powder
1 teaspoon salt
3/4 cup milk
1/2 cup onions, finely chopped
1 egg
Heat oil in a heavy skillet (about 2- 2 1/2 inches of oil) until hot.
Beat the egg and then mix in the remaining ingredients.
Make sure that your dry ingredients are all moist.
Using a tablespoon, drop balls of batter into the hot oil, about 2 inches long by 1 inch thick.
NOTE: I usually only cook about 4 or 5 at a time.
These should float in the hot oil, but not be covered by it.
You will need to turn these as they cook.
Fry until they are a golden brown and then drain them on paper towels.
Serve with fish- of course!

INGREDIENTS
2 quarts vegetable oil for frying
3 cups cornmeal
2 teaspoons baking powder
1 1/2 teaspoons salt
1 1/2 cups milk
1/2 cup water
1 egg, beaten
1 small onion, minced
DIRECTIONS
Heat vegetable oil to 365 degrees F (185 degrees C).
In a large mixing bowl, combine corn meal, baking powder, salt, milk, and water. Mix in egg and chopped onion.
Shape the batter into small balls, approximately 1 tablespoon each.
Use a long handled spoon to gently slide the hush puppies into the hot oil. Cook 8 or 10 at a time, until golden brown. Remove from the oil with a slotted spoon, and roll on paper towels to briefly drain. Serve hot.

Serves 6 to 8

1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon coarse salt
1/2 cup grated onion
1/4 cup sliced green onion
1 large egg yolk
1 cup buttermilk
6 large egg whites
Canola oil, for frying
1. In a large bowl, whisk together cornmeal, flour, baking soda, baking powder, and salt. Stir in onions. Combine egg yolk and buttermilk; stir into cornmeal mixture until combined.
2. In the bowl of an electric mixer fitted with the paddle attachment, beat egg whites until stiff. Gently fold into cornmeal mixture.
3. Fill a large deep skillet with 2 to 3 inches oil. Heat oil until it reaches 375° on a deep-fry thermometer. Working in batches, drop batter, 1 teaspoon at a time, into the oil and cook, turning once, until the hush puppies rise to the surface and are golden brown, 2 to 3 minutes. Transfer to a paper-towel-lined plate. Serve immediately.

Hush Puppies
2 c. yellow corn meal
1 tsp. salt
1/2 tsp. black pepper
1 1/2 tsp. baking powder
1 lg. finely chopped onion
2 eggs, well beaten
4 T. vegetable oil
Milk
Vegetable oil or other fat
To prepare, sift twice the corn meal, salt, black pepper and baking powder, second sifting into a medium bowl. Now add the eggs and oil; blend well with enough milk to make a stiff dough. Shape into small "fingers" about 3" long and less than 1" thick, or in small balls, about 1 to 1 1/2" in diameter.
Have the fat hot in your cast iron skillet; drop the hush puppies into it and let them cook till golden brown. Drain well and serve hot.
