Pizza Dough
3/4 cup warm water (105 - 115 F.)
1 1/2 teaspoons active dry yeast
2 cups unbleached all-purpose flour
1 teaspoon salt
In a measuring cup stir together water and yeast until yeast is dissolved. In a large bowl whisk together flour and salt and add yeast mixture, stirring until a soft dough forms. On a lightly floured surface knead dough until smooth and elastic, about 10 minutes.
Oil a large bowl (preferably with olive oil) and transfer dough to bowl, turning to coat. Cover bowl with plastic wrap. Let dough rise in a warm place until doubled in bulk, about 1 1/2 hours.
On a lightly floured surface flatten dough with your hands. Cut dough in half and form into 2 balls. (Dough may be made 1 day ahead to this point. Wrap balls loosely in plastic wrap and chill in a small sealable plastic bag. Return dough to room temperature before proceeding.) Dust tops of balls with flour and cover each ball with an inverted bowl large enough to allow dough to expand. Let dough rise in a warm place until doubled in bulk, about 1 hour.

If you mean the dough:
1/2kg plain flour
pinch of salt
pinch of sugar
water
1 sachet yeast
You can mix in a blender or by hand.
If by hand:
Mix Flour, yeast, salt and sugar
Pile flour on bench or flat board and make a well in the middle.
Add water (warm not hot) to well and fold in dry mix with a fork until water is absorbed - Repeat until you have a firm but moist mix(not overly wet or sticky and not so dry it doesn't hold together) When right moisture level is reached knead by hand
Cover in plastic wrap and place in fridge for min 2hrs
When you're ready to make your pizzas flour the bench and flatten out dough ball by hand then roll with pin working into round shape.

here it is:
INGREDIENTS
1 (11 ounce) log goat cheese, crumbled
1 (7 ounce) jar roasted red peppers, drained and chopped
1 cup chopped sun-dried tomatoes marinated in olive oil, drained
4 pita bread rounds
1 cup fresh basil leaves, torn
1/2 cup balsamic vinegar, or to taste
DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C). Separate the pita breads by cutting around the outer edge, and carefully prying the halves apart to make two rounds out of each one.
Place the separated pita rounds onto cookie sheets. Generously sprinkle goat cheese, roasted red peppers and sun-dried tomatoes onto each one.
Bake the pizzas for 16 minutes in the preheated oven, or until the crust is crisp. As soon as the pizzas come out of the oven, sprinkle with torn basil, and drizzle with balsamic vinegar. Cut into quarters, and serve hot or warm.

Pizza Dough
Makes one thick or two thin 12-13" pizza crusts.
Ingredients:
1 cup water
2 tablespoons olive oil
1 1/2 teaspoons salt
2 1/2 cups bread flour (or all-purpose flour)
1 packet active dry yeast
For Wheat Crust: substitute 1/2 cup of the white flour with whole wheat flour. Makes for a thicker crust and it rolls out better.
Prepare dough in bread machine on the "dough" cycle. (Alternately you can mix the ingredients by hand: stir flour into remaining ingredients until blended, then turn out onto a floured surface and knead for 5-10 minutes. ) When dough is finished rising, turn out on floured surface. (For thin crust pizza, cut dough in half and refrigerate one half in a plastic bag or container; use within 2 days.)
Coat a 12-14" pizza pan with olive oil (or PAM). Dust lightly with cornmeal to help prevent crust from sticking to pan.
Roll out dough to desired thickness and diameter. (The thinner it is, the crunchier the final pizza will be.) Drape dough over pizza pan; trim edges. Bake crust at 400F for 5-10 minutes or until lightly browned. Remove from oven and add desired toppings, then bake another 10 minutes or until cheese is bubbly.
Pesto Pizza
3 cloves roasted garlic
olive oil
1/4 onion, sliced
1/4 bell pepper, chopped
3 or 4 fresh mushrooms, chopped
1/2 cup shredded cheese (a shredded Italian blend, or mozzarella/parmesan blend, works well)
spoonful of pesto
Roasted Garlic:
This is optional, but makes for excellent garlic flavor on pizza. I suggest making it while the dough is rising in the machine. Take 3 large cloves of garlic (unpeeled) and slice off one end of each clove. Add several tablespoons of olive oil to a small oven-proof bowl (or, I just take a square of aluminum foil and fold up the edges, to make my own disposable container). Dip the cut ends of the garlic into the oil, then lay the garlic in the oil. Sprinkle with pepper; bake for 30 minutes at 300F. When done, remove and pour the now garlic-flavored olive oil into a small container. Let the garlic cool off for a bit, then remove the softened garlic from the peel.
Pizza:
Brush pizza crust with garlic-flavored olive oil (if you roasted garlic; otherwise just use regular olive oil). Mash the roasted garlic and spread it around on the pizza. Take a fork-full of pesto and spread it around also. Sprinkle the cheese around until it just covers the pizza. Add onions, bell peppers, and mushrooms. Bake at 400°F for 10 minutes.
Tomato-Based Pizza Sauce
1 14.5oz can Hunt's diced tomatos
1 tablespoon sugar
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon oregano
1/8 teaspoon basil
1/8 teaspoon thyme
1/8 teaspoon garlic powder
Place diced tomatoes in a food processor and puree. Pour into saucepan; add remaining ingredients. Bring mix to a boil; reduce heat and simmer for 15-20 minutes. Makes 1 cup.
Pepperoni Pizza
Prepare pizza crust and tomato sauce. Roll out crust and cook 6-8 minutes in 400 degree (preheated) oven. Remove from heat; top with 3-4 tablespoons of sauce, 1/2 cup shredded mozzarella/parmesan cheese, and sliced pepperoni. Return to oven and cook another 10 minutes.
