Tex-Mex Salad with Chili Vinaigrette
Makes 8 to 10 servings
Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)
Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.
Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

First marinate some thawed boneless skinless chicken breast in some Italian dressing for at least 30 minutes (preferably 2 hours) in the fridge. Then saute the chicken in 2 Tbs extra virgin olive oil, along with some scallions. After chicken is done, slice and set aside to put atop the below salad.
I like a field green salad with sliced strawberries, slivered almonds, and shredded carrots.
Then top it all off with a nice raspberry vinaigrette.

Ranch Pasta Salad:
Cooked pasta(any kind)
diced tomatotes,bell pepper,cucumbers diced, chopped fresh broccoli, sliced black olives(optional), anything else that you would like to put in it;
Dressing:
1/4 cup Italian Salad Dressing
1/2 cup Ranch Salad Dressing
Mix with the stuff and pasta and refrigerate or a couple of hours, big hit at parties

Green Salad with All the Trimmings:
- Lettuce to your taste, not iceberg. Baby spinach, Romaine, Etc..
- Tomatoes, vine tomatoes are best but anything will work
- Avacado
- Cucumber, Lemon cucumber is best but any kind will work
- Grated Cheese, Sharp cheddar works best but your taste preference will do
Cut it all up as you like and toss.
Add a shake or two of garlic salt, a bit of lemon pepper, and a bit of parmesean cheese (if you like parmesean) and toss again.
This makes a great green salad! Use your choice of dressing.
Oh and don't forget the croutons!!! (cesear croutons are tastiest)

My favorite salad is a Maryland Chicken Salad.
I LOVE IT!
You get lettuce and other fresh greens.Untop pile fried chicken,apples,raisins and grapes and a recipe dressing kind of like italian.

I'm not sure what it is called but, my Grandmother makes it a lot. you start with a regular bag of salad mix in raisins(not to many),any kind of croutons( garlic is my favorit),boiled egg's,and Bacon bit's. It sounds weird with the raisins but ,it's good.o- and your favorit dressing(my favorit is Italian).

I love spinach leaves with hearts of palm and sliced almonds or whole pine nuts. Drizzle a little white wine vinegar on top. Very elegant with a clean, fresh taste.

Take any kinds of lettuce like you like, put on plate. Add some crispy fried chicken strips, such as Tyson brand, and top with your favorite dressing. I like Ken's creamy parmesan with black pepper. Or else blue cheese. MMMMMMMMMMMMMmmm. Good.
