Usually tests are used to see what you know at the end of a unit. Quizes are given during the unit to see how you understand. For example, lets say in history your studying the Civil War. You will have a test on everything you've learned about the civil war, but quizzes to test small sections of what you've learned. Usually tests are worth more too.

A test is worth more and is meant to test a skill or knowledge base. Any good teacher uses a quiz to 'test' themselves to see how much their students understand material. In my opinion, quizzes shouldn't count towards a final grade.

A test usually has more questions, is more comprehensive, and carries a greater weight in your over-all grade. Also, tests are usually scheduled and announced in advance, while quizzes may be of the "pop" or surprise variety.
