Well, the fertilized ones hatch and make more turkeys. The unfetilized ones can be used just like chicken eggs. I'm sure some gourmet restraunts use them. I've seen them used on "Iron Chef America" as well as ostrich and quail eggs.

They sound good to me too. I would love to try them for breakfast instead of small chicken eggs. I think some of the ranches sell the ones they don't use to grow new turkeys.
