Exposure to air or moisture will cause this, but don't worry, it has no bad effect on the chocolate. It is still delicious and safely edible.

If exposed to cold (like in a refridgerator) or melted and left to recombinate it will turn a chalky white color. It doesn't mean a thing. It shouldn't affect how it tastes.
