I always thought pizza pans had to have holes, but i've noticed lately that they make them without them.

The pizza pan with holes has holes in it and the pizza pan without holes does not. That's the difference.

Holes allow air to come through the bottom creating a crisper crust.

I've used both kinds for home-made pizza. I bought the kind with holes because I liked the idea of a drier crispier crust--- but whenever I used the kind with holes for home-made, the dough would rise through the holes making it impossible to get off the pan without a big mess. So now I use the hole-y kind only for frozen pizza that will not rise any more, and either oil a regular pan, or sprinkle it well with corn meal for all the ones that rise--- home-made or frozen.
Hope this helps!
