I love steamed brocolli and am looking for a topping. Most restaurants coat it in butter and salt and it tastes yummy.... but I don't need the added calories and sodium.

What is a good suggestion for 1) best way to make fresh brocolli and 2) what to put on for added flavor?

I myself use butter substitute and Seasoning Salt which both are lower in calories but still have a great taste.

There's also Velvetta cheese, but here is something I do.......

1. Garlic and White Wine

6 tablespoons extra virgin olive oil
4 garlic cloves, thinly sliced
1 lb broccoli, cut into spears, lengthwise
6 ounces dry white wine
1 tablespoon red chili pepper flakes (optional)
1 lemon, zest of

In a 12 to 14 inch saute pan, heat the olive oil and garlic until just sizzling.
Add the broccoli and cook, tossing regularly for 8-10 minutes, until the stem is tender.
Use the wine to slow the cooking down if the garlic begins to brown.
When the broccoli is tender, add the chili flakes

or...........

2. Dijon Broccoli is a FAV

1 bunch fresh broccoli
3 tablespoons unsalted butter
2 tablespoons extra virgin olive oil
1 1/2 teaspoons low-sodium worcestershire sauce
salt & freshly ground black pepper
1 teaspoon Dijon mustard
1 tablespoon cider vinegar
cayenne pepper

Steam the broccoli until it is barely tender.
Combine all other ingredients and heat until butter melts.
Stir to blend.
Pour over the hot broccoli.

Enjoy!

i usually buy the "broccoli wokley" thing from the supermarket. poke a few holes in the bag, microwave for a few minutes. Then top with lemon pepper seasoning. I have on ocassion but a flavored herb butter on the broccoli if I am going fancy like the restuarants.

A good topping is fresh lemon or lemon pepper seasoning. There are a bunch of types of lemon type seasonings out there. Lemon garlic, lemon shallot, a lot of resturaunts will take a low fat margerine and squeeze fresh lemon in the margerine and let it melt over the steamed broc.
