I need a simple and deliciousous recepi for chicken thighs in the crock pot.

I use this one for a whole chicken..........

Smokehouse Chicken
1 whole chicken
1/4 cup liquid smoke

Rinse chicken inside and out, and pat dry.
Place in crock pot, breast side down.
Pour liquid smoke over top.
Cover and cook on low until done, about 10 hours, or until chicken is cooked to desired tenderness. (some crock pots cook faster than others, even on low).
Edited on 10/5/04 to add: If desired, salt your chicken inside and out before placing in crock pot. I've recently learned that some liquid smoke has added ingredients, and that will also affect the results -- the kind I use is only "water and smoke." Also, cooking times vary with different crock pots and with the size of your chicken. When I prepare this, I use a chicken weighing between 4 and 4 1/2 pounds. Your chicken may be done in less than 10 hours -- use your judgement based on past experience with your crock pot.

Crockpot Chicken Stroganoff

Ingredients

(4 servings)

6 Boneless Chicken Thighs
16 oz Sour cream
1 cn Cream of Mushroom soup
1 pk Onion Soup mix, Lipton's


Instructions

Mix all together and put into crockpot. Cook on low for 4 -6 hours. Or until chicken is tender. Serve over cooked noodles or rice

4 to 6 chix thighs
1 med onion
8 oz mushrooms
1 small can black olives
1 med green pepper
2 cloves garlic
2 12oz can tomato sauce
2 Tbs oregano
1 Tbsp Basil
3 Tbsp Olive Oil
Flour to coat chix
salt and pepper to taste

Preheat a skillet and place your olive oil in the pan. Coat your chix thighs with the flour and brown in the skillet. Once brown place them into you crock pot. You will want to cut your onion into big pieces, Green pepper slice, garlic mince, add all ingredients to the crock pot and stir it around a bit and set to low let this cook and simmer for 6 to 7 hours. Serve over garlic mashed potato, or any type of pasta.

Chicken 'N Olives

3 lb chicken thighs
salt/pepper
1 clove garlic, minced
1 lg. onion chopped
2 bay leaves
3/4 cup beer
1 (8oz) can tomato sauce
1/2 cup pimento stuffed olives

wash chicken and pat dry. Lightly season with salt/pepper. Combine garlic, onion, bay leaves, beer, tomato sauce, and olives in crock pot. Stir well. Add chicken pieces, turning to coat with sauce. Cover and cook on low setting for 6 to 9 hours. Serve over hot brown rice.

Put them in the crock pot with some Italian dressing. Let them cook 4-5 hours and enjoy!

try this, it's really good!

STUFFED CHICKEN THIGHS

1/2 c. finely chopped celery
1/2 c. finely chopped onion
3 tbsp. bacon drippings
2 tbsp. dry sherry
1/4 tsp. poultry seasoning
1/4 tsp. pepper
2 c. soft bread crumbs
3 slices bacon, cooked, crumbled
8 chicken thighs, boned, skin intact
1/2 tsp. garlic salt

Saute celery and onion in 2 tablespoons of the bacon drippings in medium skillet over medium heat until soft, about 4 minutes; remove from heat. Add sherry, poultry seasoning and 1/8 teaspoon of the pepper; mix well. Add bread crumbs and bacon; mix well.
Place chicken thighs, skin side down, on flat surface. Spread each thigh with 2 tablespoons of the bread crumb mixture; roll up and fasten with wooden picks.

Place thighs seam side down in single layer in shallow baking dish. Brush lightly with remaining 1 tablespoon bacon drippings; sprinkle with garlic salt and remaining 1/8 teaspoon pepper. Bake in preheated 450 degree oven for 7 minutes. Reduce oven setting to 350 degrees; bake until chicken is golden and fork-tender, about 45 minutes longer.

throw ya chicken n veggies in drizzle oilve oil on them.. add garlic salt pepper and chicken stock tomato sauce and soy sauce...
