I have ground beef defrosted but I'm not sure what to make.

Make a thick chili, or even taco meat filling, and serve it right over the mac & cheese.

Make mini meatloaves, but pan fry like a burger, instead of baking.
With a side of veggies you're ready to dig in.

My mom used to make a one-pan ground beef dish. Brown the beef and season to taste. Add canned, leftover, fresh, or frozen veggies and heat through. With the mac & cheese you have dinner.

if you dice up an onion and slice a green pepper and then brown you beef in the skillet and add the onion and peppers and let them get soft. Drain the grease and add this to the mac and cheese along with a little garlic powder and a can of tomato sauce and let it bake for 45 min at 350.

Round out your mac and cheese with a vegetable plate. I suggest fried okra, pinto beans, and corn. Good old fashioned comfort food. Don't forget the cornbread.

Save the hamburger for tomorrow night and use it with the left over veggies.

try making a meat pie and for a side dish try pork and beans mixed with onions then bake in the oven
