I would suggest that you work through your local volunteer center. They can connect you with a wide variety of different volunteer opportunities that can be one-time, short-term, or long-term. The volunteer opportunities and agencies are typically screened by the staff at the volunteer center, so you should be able to find something that matches your interests, as well. I volunteer through one of the Hands On Network affiliates.
Here's some links to help you find your local volunteer center:
http://www.handsonnetwork.org/our-network/
http://www.pointsoflight.org/centers/find_center.cfm
As non-profit agencies, volunteer centers can also provide you with appropriate documentation that you may need for school or scholarships.
I currently work through my volunteer center to tutor kids at our local library, lead teens volunteering at the local museum, package food at our local food bank, and work at the local children's shelter. There's always a variety of things to do that make a real difference in your community.
Good luck!

The orphaned chimpanzees at the Jane Goodall Institute's Tchimpounga Sanctuary are in need of help, and we, the youth of Roots & Shoots, have worked hard to give them a second chance at life. Through the collaboration of hundreds of youth, families, individuals and businesses around the world, we have surpassed our goal of $50,000 to fund a new chimpanzee care facility to serve the growing population of orphaned chimpanzees at Tchimpounga Sanctuary in the Republic of Congo.
The baby chimpanzees, most of whose families were victims of the international, commercial bushmeat trade, will now have a better place to go for refuge. Currently, the Tchimpounga Sanctuary houses 126 chimpanzees, a number that could increase any day. This has been a very exciting awareness and fundraising campaign with stories and donations coming from all over the globe.

Look up Catholic Charities. My husband has been volunteering with that group since 1998. According to him, they have a program to suit anybody's field of interest or profession.
Have a nice day!
