I've read anywhere from every day to only twice per week. I know it's probably best to limit high-mercury fish, like tuna, but what about the really good fish, like fresh water alaskan salmon?

Everyday is fine but you should limit the mercury laden fish to once or twice. There are five varieties of Salmon; Pink, Chum, Coho, Chinook and King. The last two are favored by the Asian buyers as they've got the highest oil content. They are the least abundant as well so they command the highest prices. All five have several other names. Example: Chums are often referred to as "Keta or Silver Brights" and Pinks are called "Humpback".

Salmon is not a "fresh" water fish. It is an ocean fish and travels up the rivers and streams to reproduce and then dies.

There are several kinds of salmon, sockeye, pink, chum and perhaps one or two other kinds. Its a matter of personal preference which you prefer.

Sockey or pink are the usual types available at the fish mongers. I prefer sockey or pink - but insist they are "wild" vs. "farmed".

I also prefer to eat almost any kind of fish for my protein rather than red meat. Several times a week is fine as far as I am concerned. I eat tuna as well.
