I love quick, easy and tasty, here's a couple that I've done recently:
Stir Fry Chicken
l lb boneless skinless chicken breast cut into strips
saute chicken in skillet w/ 2 tbsp olive oil til cooked all the way through
Mix up a package of stir fry seasoning and add to chicken (it comes in those pouches in the spice area at grocery store)
While the chicken is simmering in the seasoning, chop up a head of brocoli into bite-size pieces and microwave about 2 minutes (crisp tender). Add the brocoli to the chicken and stir to coat well.
I warmed up some left-over pasta and served the stir fry chicken brocoli over the pasta, but you could use rice.
It took no more than 5-10 minutes and was yummy, protein, vegi, and carbs all in one bowl w/ very little clean up.

Made this one recently too, it was also quick, easy, & really good (I think it took about 15-20 minutes from start to table):
2 thin boneless pork loin chops (approx 4-5 oz each)
Mix together: 3 TBSP bread crumbs, 3 TBSP parmesan cheese, 1 TBSP finely chopped fresh cilantro or Italian parsley, dash of ground black pepper
Spread both sides of the chops with dijon or deli mustard, then coat w/ crumb mixture
Broil about 5-6 minutes on each side (depending on thickness)
Serve with baby green salad w/ tomatoes and avocados, and pasta.
Pasta: cook spiral pasta al dante, toss with a little olive oil, parmesan cheese (and optional but recommended, toasted pine nuts and/or sliced & quartered, sauted zucchini)

EDIT: Here's one more that I just did using leftover turkey, again very simple, quick and tasty - serve w/ tossed salad:
Turkey Enchiladas w/ Sour Cream
3 cups shredded skinned cooked turkey or chicken
1/3 cup vegetable oil
2 cups sour cream
12 corn tortillas (also good w/ flour tortillas)
About 2 cups (8 oz) shredded sharp cheddar cheese
(sub monterey jack for variety)
1 jar (16 oz.) medium-hot salsa
1. In a bowl, mix turkey w/ sour cream & 2 cups shredded cheese.
2. Heat oil in an 8-10” frying pay over low heat (I skip this part when using flour tortillas). Dip the tortillas, one at a time, in the hot oil just until limp, about 5 seconds.
3. Fill tortillas equally w/ turkey mixture, roll up, & arrange side by side, seam down, in 9X13” baking dish. Pour salsa evenly over the top.
4. Bake at 350 until heated through, about 20 minutes. If desired, sprinkle more shredded cheese over hot enchiladas before serving.
Note: shredded or ground beef may also be used instead of poultry. Enchilada packet &/or tomato sauce may be used instead of salsa. Rice could also be added to the filling mixture.

1 pound of hamburger,
2 cans of tomato paste
1 can chopped tomato inluding the liquid
2 large onions - diced
4 T chili powder
2 T cumin powder
1 tsp garlic powder
1 tsp parsley flakes
1 tsp white pepper
1 tsp paprika
Put all into a crockpot in the morning - go to work and when you come back, you will have a filling, well seasoned chili. Just a quick stir and you are ready to go. If you want pasta, boil some water, cook your favorite pasta and pour the chili over it.
Some people add salt but I don't do salt as there is plenty of sodium in canned tomato items.
If it's too late to do that for the occasion you have in mind, you can do the whole thing in a saucepan on the stove. Brown the hamburger first, then add all the other ingredients, cover and simmer for 30 minutes so the flavors will mingle and the onions will cook. Stir a few times during the simmering.
For a quick and easy dessert:
1 cup cream cheese
1 cup brown sugar
1 cup sour cream
1 tsp vanilla extract
Blend altogether until smooth. Cover the bowl with plastic wrap and chill an hour. Serve in a dessert cup with fresh or canned fruit over it or sprinkle with cinnamon. It's known as cheesecake pudding.

Go to HillyBilly Housewives. It has a wonderfully frugal and yummy holiday menu. Look up 'thanksgiving' in the search bar and you'll find a menu. One of faves is the Sweet Potato Casserole. Here's the recipe: - 3 cooked sweet potatoes - 1 cup sugar - 4 tbsp butter - 1/2 cup milk - 1 1/2 tsp vanilla extract topping- - 1/2 brown sugar - 1/3 cup flour - 1 cup pecans or rolled oats if you want really cheap - 1/3 stick butter, cold and diced Mash sweet potaotes. Mix all ingred. on top together and all ingreds. on bottom, in seperate bowls (I use big ziplock bags to mix to save dishes later). In a casserole dish, put 1st mix on the bottom then add the top mixture. Bake @ 325 for 30 minutes. Hope that helps you out!

QUICK AND EASY MANICOTTI
1 lb. Ricotta cheese
1 egg
1 1/2 c. grated Mozzarella cheese
1/4 c. Parmesan cheese
1/2 tsp. dried parsley flakes
1/2 tsp. salt
2 or 3 drops hot sauce
1 (6 oz.) pkg. manicotti shells
Beat together Ricotta cheese and egg until smooth. Add Mozzarella, Parmesan, parsley, salt and hot sauce. Mix well. Fill manicotti tubes UNCOOKED. Spread some sauce in 13 x 9 inch dish. Add manicotti, single layer. Top with remaining sauce, cover and bake at 350 degrees for 45 minutes to 1 hour.
SAUCE:
For and easy, quick dinner, use any jar spaghetti sauce; add seasoned cooked hamburger meat.

Charlene's Ritzy Chicken
4-6 boneless, skinless chicken breasts,
cooked in micorwave for 20 minutes
1 can of cream of chicken soup
8 ounces of sour cream
1 sleeve of Ritz crackers
1 stick (1/2 cup) of butter
Place chicken in glass baking dish. Mix soup and sour cream togther
and pour over chicken. Crush Ritz crackers in freezer bag. Melt
butter and pour into freezer bag, sprinkle over chicken. Bake at
350 degrees for 30 minutes.

cook grd beef - 1 lb or chop up lunch meat...etc.....
pizza sauce - subitub - ketcup with oregno to taste
shredded cheese - or any cheese
6 pieces of white bread
toast your bread lighty
lay toasted bread in pan
spread some sauce on them
add cooked meat or chopped what ever
add cheese on top
pop in oven 350degree for 10 to 15 minutes
till brown on bottom and melty on top
YUM !!!! YUM !!!!..eat it up....it's quick and delisssss!!!!

pasta cooked, tomato sauce mixed in to cooked pasta, cheese on top. put in oven for `10 mins. excellent served with garlic bread and salad.

Call up your local Round table pizza. with prep and cooking time dinner should be ready in about 20-30 mins.. enjoy .. if you r looking for a quickand easy dish.. it donest exsist unless u order out.. all meals are meant to be completed in an hour or so.. its takes tme to truely create a culinary masterpeice.. good luck.. or you can try these simple recipes i teach in my cooking classes..
Nachos Santa Fe
Recipe Ingredients:
2 lb. Tortilla Rounds Chips
16 oz. can Refried Beans or leftovers
1/2 cup Sour Cream
2 cups cooked Chicken
1 1/2 cups Monterey Jack Cheese shredded
1 can Jalapenos sliced
Recipe Instructions:
1. Spread tortilla Rounds chips over microwave-safe platter or baking sheet. Spread 1 teaspoon of refried beans on each chip. Top with sour cream, chicken, cheese and jalapeños.
2. Heat on high for 1-2 minutes or until cheese is melted.
Eight Layer Torte
Recipe Ingredients:
1 pkg. Taco Seasoning Mix divided
1 cup Sour Cream
16 oz. can Refried Beans
15 oz. can Black Beans drained
1 medium Tomato chopped
1 small can sliced Olives drained
1 cup Cheddar Cheese shredded
1 large Avocado peeled, seeded and chopped
1/4 cup Scallions or Green Onions thinly sliced
Salsa
Cilantro Sprigs for garnish
6 Soft Taco Size Flour Tortillas
Recipe Instructions:
1. In a small bowl, mix together 2 teaspoons Taco Seasonings with sour cream; set aside. In a medium bowl, mix together remaining Taco Seasonings with refried beans; set aside.
2. To make two tortes, place 2 tortillas on two separate plates. Top each tortilla with 1/4 of refried beans, black beans, tomatoes, olives, cheese, avocado, sour cream, and green onion, making sure to spread toppings toward the outer edge of tortilla. Repeat layer ending with a tortilla. Wrap both tortes with plastic wrap and refrigerate until ready to serve.
3. When ready to serve, slice into wedges with serrated blade knife. Spoon salsa over wedges and garnish with a sprig of cilantro, if desired.
