I Have been doing bathrooms for a year or so. all the past jobs I just retiled over the old floor and never had any problems. This BathRoom now is all new on 2nd floor. I am starting with a 3/4 subfloor. I avve to do a mortar bed. How thick,and what type of mortor do I use? Do I start with tar paper,Mesh then Pour Mortor?

I guess I don't understand why you need a mortar bed when there is concrete backerboard that can be used on top of the 3/4 subfloor. But if you have your reasons then you need tar paper or a thick mil plastic barrier stapled to the floor followed by some mesh or wire. You can also use the self leveling concrete that does not require much thickness.

You might want to consider using cement board, with perhaps a thinner sub flooring if needed. It is commonly used for tiling in bathrooms as it stands up to moisture and is extremely stable.
But if the floor isn't level you will have to use self leveling cement /or mortor over mesh.

I would recommend screwing cement backer board to the plywood and adhering the tile to the cement backer.
