It's my husband's favorite, but I don't know what to make with it. I don't want to ask him what he wants because it's going to be a surprise. Thanks!

I would go with the buttered parslied baby redskin potatoes. After you wash them, slice a strip of the peel from around the middle of the potato before you boil them. After boiling and draining them toss them in a hot skillet with lots of butter until they are lightly browned. This gives them a nice crispy coating. Salt and pepper to taste. Garnish with parsley. Some nice crusty rolls would be nice too!

Here's how I make it:

Cook the corned beef brisket in a crock-pot (or simmer a while on low heat.) It takes a loooong time to cook--don't be impatient! That's why the crock-pot is good.

Remove the brisket, and cut off the big sheet of fat on top. Add water to the cooking broth if you need to. Put in small red potatoes (new potatoes if you can find them), cut in chunks (you don't have to cut new potatoes unless they're big.) Also, carrot chunks, onions, celery if you like, and the cabbage, cut in wedges.

Boil briskly until the veggies are done. Put the brisket back in the pot to warm.

That way, the cabbage won't be slimy and overcooked. But everything tastes like corned beef.

Serve with sour cream and/or butter for the veggies if you like. Plenty of black pepper, but skip the salt cuz there's salt enough in the beef for the whole lot.

And cornbread is good, too. I forgot that.

As far as carrots--don't cook baby carrots unless they're actual baby carrots (not "baby-cut" carrots in the bags.) They get a strange, foamy texture that is highly unpleasant, and they don't taste as good as regular, full-length carrots.

If you have any leftovers, make sure you have some rye bread (or pumpernickel) for sandwiches!

whatever you like for dessert! Although Shortbread Cookies are popping into my mind....

Boiled or baked small, red potatoes with butter & parsley or mashed potatoes are typically served with that meal in my house. Cooked baby carrots is another option if he doesn't like potatoes.

Diced carrots, mashed potatoes, and cauliflower with a white onion sauce ( you can add cheese and/or mustard to it ) poured over the top....... and a little over the meat too. Delicious !
