I had cherry nut cakes at weddings and omg there the best...Dose any one have a recipe i can have i wanna make a birthday cake for my daughters 20th birthday i know she would love this....i hope to have a nice smooth and fluffy recipe and possible a goood frosting recipe as well but i really want a good recipe..

1 pt. sour cream
1 tsp. baking soda
2 sticks butter or margarine
2 c. sugar
3 eggs
2 tsp. vanilla
1 tsp. almond extract
1 c. chopped walnuts
1 c. quartered maraschino cherries
3 c. flour
1/2 tsp. salt

--CREAM CHEESE FROSTING:--

3 oz. pkg. cream cheese
1/4 c. butter
2 c. confectioners' sugar
1 tbsp. milk
1 tsp. vanilla

Add baking soda to sour cream and set aside. Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add sour cream and soda mixture. Mix. Add flour and salt. Mix well. Fold in cherries and nuts. Bake in a greased tube pan in a 350 degree oven for 60 to 70 minutes. Cool and frost with Cream Cheese Frosting. FROSTING: Cream together cream cheese and butter until smooth. Beat in confectioners' sugar, milk and vanilla. Beat well. Faculty

2 1/2 c. plain flour
1/2 c. cocoa
3 tsp. baking powder
1/2 c. partially melted shortening
1/2 c. chopped maraschino cherries
2 tsp. vanilla
1 1/2 tsp. almond extract
1/2 c. evaporated milk
1/2 c. hot water
2 c. chopped pecans

Beat eggs, add sugar and set aside. Sift flour, cocoa and baking powder together and add this to sugar and egg mixture. Add shortening, vanilla flavoring, extract, milk, water, pecans and cherries. Mix well. Pour into a floured and greased 10-inch tube pan. Bake at 325 degrees for 1 hour and 10 minutes, or until done.

CHERRY NUT CAKE

1 1/2 c. pecans
1 1/2 c. walnuts
8 oz. maraschino cherries, drained
1/2 lb. pitted dates
3/4 c. flour
3/4 c. sugar
1/2 tsp. baking powder
1/2 tsp. salt
3 eggs
1 tsp. vanilla

Put fruit and nuts in large bowl. Sift flour, sugar, baking powder and salt together and add to fruit and nuts. Beat eggs until foamy, add vanilla and stir into other mixture. Pour into 2 well greased pans, approximately 7 3/8" x 3 5/8" x 2 1/4". Pack evenly in pans. Bake at 300 degrees for approximately 1 hour.
(NOTE: I usually double recipe to make 4 cakes to share with friends and relatives at Christmas time.)

I was able to get the cake recipe AND the frosting recipe. Enjoy!

INGREDIENTS
2 1/4 cups cake flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shortening
1 1/3 cups white sugar
3 egg whites
2/3 cup milk
1 (10 ounce) jar maraschino cherries
1/2 cup chopped pecans
3/4 cup butter
6 cups confectioners' sugar
1/3 cup milk
6 drops red food coloring
1 1/2 teaspoons vanilla extract
1 (4 ounce) jar maraschino cherries

DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease and lightly flour two 8 or 9 inch round cake pans or one 9x13 inch cake pan. Reserve 1/4 cup maraschino cherry juice. Coarsely chop the cherries to make 1/2 cup. Set aside.
2. Combine flour, baking powder, and 1/4 teaspoon of the salt in a small bowl and set aside.
3. Beat shortening in a large bowl with an electric mixer on medium high speed for 30 seconds. Add the 1 1/3 cups white sugar and beat until well combined. Add the egg whites, one at a time, beating well after each.
4. Combine 2/3 cup milk and 1/4 cup cherry juice. Add the flour and milk mixture alternately to the shortening mixture, beating on low speed after each addition until just combined. Stir in the chopped cherries and nuts. Pour batter into prepared pans.
5. Bake in a 350 degrees F (175 degrees C) for 25 to 30 minutes for two 8 or 9 inch round cakes or for 30 to 35 minutes for a 9x13 inch pan. Cool cakes in pans on a wire rack for 10 minutes, remove from pans and allow to them to cool fully before frosting.
6. To Make Butter Frosting: Beat 3/4 cups butter in a large bowl till fluffy. Gradually add 3 cups sifted confectioners' sugar, beat well. Slowly beat in 1/3 cup milk, 1 1/2 teaspoons vanilla and 1/4 teaspoon salt. Gradually beat in the remaining 3 cups sifted confectioners' sugar. Beat in additional milk (1 to 2 tablespoons) if needed, to make frosting of spreading consistency. If desired tint the frosting pink by adding 6 drops of red food coloring.
7. Once cake is completely cool frost with butter frosting and decorate with maraschino cherries with stems.
