Slice ( on the diagonal ) the LAMB liver about 1/4 inch thick, fry the onions ( and bacon bits ) in oil until lightly browned, remove from pan, coat the liver in a seasoned flour ( salt, pepper and a little chili powder if liked ) and fry in batches, turning, for about 2 minutes in a moderately hot pan until outside is a little crisp, remove from pan, add a cup of beef stock ( maybe more or less depending on how thick you want the sauce ) to the pan and stir until bubbling, put liver, bacon and onions back in and stir to combine and warm through on a low heat. serve with mashed potatoes and whatever veg you like.

BABY BEEF LIVER AND ONIONS

2 lg. onions, quartered & sliced thinly
2-4 tbsp. peanut oil
1 bay leaf
Salt & Pepper
1 lb. baby beef liver
1-2 tbsp. butter
2 tbsp. vinegar

Using a non-stick skillet, heat 1 tablespoon of the oil (use 2 tablespoons for uncoated skillet), over medium high heat and add the onions, bay leaf, salt and pepper. Cook, stirring occasionally, until onions are golden brown, about 20 minutes. Remove pan contents to a bowl and keep warm.
Meanwhile, cut the sliced liver into strips about 1/2" wide and about 2" long. After removing onions from skillet, add another tablespoon of oil (more if needed) to the skillet, turning the heat up to high. When the oil is very hot, almost smoking, add the strips of liver, stirring rapidly and turning the strips so they brown evenly. Cook about 2 to 4 minutes, then drain in a colander. Return the heat to medium high, add the butter to the skillet, add the liver and toss, and add the onions and stir. Add the vinegar, stir briefly to blend and serve immediately, garnished with chopped parsley if desired. This goes well with thin noodles or rice.

Serves 4.

Fry the onions then add in strips of liver and continue frying.I like pigs liver the best as it makes a really rich gravy. Add some cornflour or bisto to thicken and a few mixed herbs,salt and pepper.Do not overcook the liver or it will be tough.Serve with mashed potatoe and frozen peas yummy!

Use lambs liver much nicer;.
Streaky bacon 6 slices;
Onions;
Sea Salt and ground pepper;
Olive oil;
Small knob of butter.

Wash liver cut into strips, removing any white bids from the liver. Toss in flour until covered and season to your liking.

Cut onions into large rings and toss them in flour also.

Add to large frying pan oil of your choice I prefer olive oil and a small square of butter, add onions and cook slowly until caramalised add liver and streaky bacon and saute lightly until cooked.....not over cooked (20minutes max). Make gravy in same pan as you cooked onions and liver.Serve with King Edwards potatoes..mashed to perfection, petite pois peas and steamed carrots.

Make the gravy thick so that you can pour over the liver and onions or alternatively return liver and onions to pan with gravy before serving this way it will be piping hot.

LIVER AND ONIONS

4 tsp. butter
3 lg. onions
1 tsp. salt
6-8 slices liver
1/2 c. flour

Melt butter in large frying pan. Peel and slice onion into pan. Sprinkle salt over liver and then roll in flour. Place over top of onions (don't let liver touch pan). Cover and fry for 15-20 minutes. Turn liver over. You can turn onions also but keep liver on top of onions. When liver touches pan it gets tough. Fry another 10 minutes or until tender. Keep covered.
