I'd make Mexican Rice with Shrimp:
Prepare 4 servings of rice according to the package instructions. Stir in enough tomato sauce to moisten, and season to taste with: chili powder, diced sauteed onion, diced sauteed celery, onion and garlic powder, and a dash of Worchestershire sauce.
Boil the shrimp in water seasoned with a dash of Tobasco and a little minced onion and garlic. When shrimp are done, serve over the Mexican rice.
This would be great with a green salad, some refried beans, and corn chips!

Fiesta Shrimp Creole
Prep Time: 15 min
Total Time: 40 min
Makes: 6 servings
2 Tbsp. oil
2 Tbsp. flour
1 small green pepper, chopped
2 stalks celery, chopped
2 cloves garlic, minced
1 jar (16 oz.) TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
1 can (8 oz.) tomato sauce
1-1/2 lb. cleaned shrimp
4 cups hot cooked rice
MIX oil and flour in large saucepan. Cook on medium heat 6 to 8 min. or until browned, stirring constantly.
ADD green pepper, celery and garlic; cook and stir 4 min. or until tender. Stir in salsa and tomato sauce; simmer 10 min., stirring occasionally.
STIR in shrimp; cook an additional 6 to 8 min. or until shrimp are cooked through. Serve over rice.

Substitute
Prepare as directed, using brown rice.
Jazz It Up
Add 1 tsp. hot pepper sauce with the salsa.

Well, I don't like typing enough to type out a complete recipe, but try searching for shrimp creole, it is cajun.

You could make a paella. There are so many versions on the internet I didn't paste any specific ones here. Depends on the other ingredients you have.
