You need to make sure the pan is hot enough before you add the oil. (not super hot because the oil will burn, but around med-high) Then once the oil gets hot enough, you can add the potatoes. Try to move them around a bit so all the potatoes can get some oil on them and then flip them every few minutes are so. Hope this helps!

I forget which TV chef used to say, "Hot pan, cold oil, food doesn't stick," but it does seem to be true. Heat the pan first, then add the cooking oil once the pan is hot. Once the oil is hot enough, then add your food.
Also, cook fried potatoes over medium heat so that you get a nice brown crust, then flip them over with a spatula and brown the other side. You want the potatoes to get a nice color and not still be half-raw, the way that they tend to be if you cook them over too high a flame.

You could deep fry your potatoes in deep oil like the restaurants do. Then when they get golden brown scoop them out of the oil with a slotted spoon and drain them well on paper towel. salt them and shake them at this point. Save strained oil in a jar afterward.

heat your oil just till it begins to smoke before putting the potatoes in. This will "season" the pan and stick less. Also don't turn them untill they are really brown on one side.

Potatoes are very absorbant, you may need to use more oil or butter. When I cook potatoes, I use a ton.

use a cast iron skillet & you need oil (veg, olive or canola).
If you want a healthier version, use non stick & cooking spray.
