Stuffed Cabage:
This is VERY good!
4 hours 1 hour prep
20 servings
1 lb ground beef
1 lb ground pork
1 teaspoon salt
1/2 cup rice, uncooked
1 onion, finely chopped
1 teaspoon black pepper
2 eggs, beaten
1/2 teaspoon paprika
1 quart sauerkraut
46 ounces tomato juice
1 ounce vinegar
3 cloves
1 bay leaf
3 peppercorns
1 teaspoon sugar
1 head cabbage
2 lbs smoked sausage, cut in 3 inch pieces
1. Mix ground beef, ground pork, salt, rice, onion, black pepper, eggs and paprika all together.
2. Core cabbage and place in steamer till leaves are tender and able to be pulled off easily.
3. Peel off what you can and return to steamer till other leaves can be pulled off easily -- repeat till leave get small.
4. Stuff cabbage leaves with meat mixture till all meat is gone, judge amount by size of leaves.
5. Shred rest of cabbage into large roasting pan, add 1/2 jar of sauerkraut.
6. Put rolls ontop of cabbage and sauerkraut.
7. Top with the rest of the sauerkraut.
8. Add vinegar to Tomato Juice and pour over rolls add water to cover.
9. Add 3 cloves, 1 bay leaf, peppercorns and sprinkle with sugar.
10. Place sausage on top of rolls and cover and cook at 325 for 3 hours.

Cabbage Success
INGREDIENTS
4 tablespoons butter
1 cup whole milk
1 tablespoon brown sugar
1 head cabbage, cored and shredded
1 onion, chopped
1 pinch salt
1 pinch white pepper
DIRECTIONS
Melt butter in a large saucepan over low heat. Add the milk, and cook for about 5 minutes, or until hot. Stir in the brown sugar until dissolved. Stir in cabbage and onion, and season with salt and white pepper. Simmer over medium heat until sauce is creamy, and the onion is tender.

slice 1/2 cabbage into a Pyrex pie plate. season with salt and pepper.
Add three tbsp water to pie plate, cover with saran or plastic wrap, leave small air space
Place in microwave oven and steam cook for about 8- 10 minutes. Use in other recipes that call for cabbage or eat as basic plain veggie side dish.

CABBAGE AND BACON MASHED POTATOES
THIS IS IRISH MAC AND CHEESE RIGHT HERE!!!DISH IS CALLED CULCANNON(SP?)
3 bacon slices, chopped
1 1/4 pounds cabbage (about 1/2 small head), cut into 1/2-inch pieces
1/2 cup water
Basic Mashed Potatoes
In a large skillet cook bacon over moderate heat until crisp and
with a slotted spoon transfer to paper towels to drain. Add cabbage
to bacon fat in skillet and cook, stirring occasionally, until
golden, about 5 minutes. Add water and simmer until evaporated and
cabbage is tender. Add bacon and season with salt and pepper. Stir
mixture into potatoes.
Baked Cabbage
1 head cabbage
1 onion
black pepper
chicken stock or powder/cube/ stock or water
diced bacon
1 Tbsp butter or margarine
Slice cabbage not too thick. Slice or dice onion. Pour chicken
stock or powder/cube/stock mixed with water or plain water into a
baking dish a couple of centimeters deep.
Layer cabbage, onion, and bacon. Season with black pepper to taste.
Dot with butter. Cover with lid or aluminum foil, bake in oven
approx 30-40 minutes on 325 degrees or can be cooked in microwave.
Check halfway through cooking, stir.
Braised Cabbage with Mushrooms
1 teaspoon sesame oil
2 cups sliced mushrooms
1/2 teaspoon ground ginger
Salt and pepper to taste
3/4 cup vegetable broth
2 pounds cabbage, diagonally sliced into 1-inch pieces
In nonstick saucepan, heat oil over medium heat. Add mushrooms.
Cover and cook, stirring occasionally, until mushrooms collapse
and give up their liquid. Uncover and continue cooking until lightly
browned. Add remaining ingredients. Simmer uncovered about 8
minutes, until cabbage is crisp-tender and most of liquid has
evaporated. Makes 4 servings.

slice it up. then steam/microwave it, once its cooked add a big blob of either tahini or peanut butter and mix it in well. - YUM
