On Valentines Day I want to make dinner for my husband. Well I got this fantastic recipe from the Food Network for Filet Mignon. I asked my husband if he liked filet mignon and he said no, he rather that I fixed tri tip. My question is, can I prepare the tri tip with the filet mignon recipe? You put a dry rub on it, sear it in a pan and then finish it off in the oven for about 10 min. Will this make the tri tip dry? Do you have a good recipe for tri tip?

It is much easier to cut the tri-tip into 1/4 inch strips if you place the tri-tip in your freezer for approximately 1 hour before you cut the meat. It helps to cut the meat if you have the proper knife.

Broil - 4 to 5 inches from the heat source, 25-30 minutes*

Roast - 425º for 30-35 minutes*

Grill - 30-35 minutes over medium coals*
*Meat internal temperature will be 135º for medium rare and 150º for medium. Tent roast with aluminum foil for 10 minutes before carving. During the standing time the temperature will rise 5-10º. Carve tri-tip across the grain into thin slices.

Beef Tri-Tip Steaks, cut 1 inch thick:
Pan-broil over medium heat for a total of 8 minutes, turning once.
Beef Tri-Tip Stir-Fry Strips, cut 1/8 inch thick:
Stir-fry strips 1 to 1 1/4 minutes.
Beef Tri-Tip Strips, cut 1/4 inch thick and woven on skewers:
Broil about 3 inches from heat source or grill over medium coals for
2 to 3 minutes.

Roast:
4 pounds tri-tip roast
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground black pepper
1 teaspoon salt

Lightly oil the cooking grate on your grill. Preheat grill and prepare for indirect grilling. Combine garlic powder, onion powder, pepper and salt. Rub it over the surface of the tri-tip roast. Place tri-tip on grill, fat side up.

You can place a drip pan under it to catch the drips which will make a great gravy later. With the grill on low cook for about 4 hours or until the internal temperature reaches 165 degrees.

Here's the simple recipe for Santa Maria style tri-tip barbecue: Take your tri-tip and trim off most but not all of the excess fat on the underside. Make a dry rub of equal parts of salt, pepper, paprika, and garlic salt. Rub the marinade in and let it sit for at least two hours (overnight is better). You can pan-sear it and finish it off in the oven at 350 for 30-40 minutes, but it tastes best grilled. To grill it, sear both sides then cook on low heat, being careful to keep the grill from flaming up, for about 25 minutes per side for medium rare, 30 to 35 minutes for medium.

yes you can use the tri tip instead of the filet. one thing to be aware, the tri tip has more fat in it than the filet. you will notice more of the marbling of fat on it. as long as the pieces you got were approximately the same size as the filet you should be fine.

as far as ways to cook tri tip i love anything done by Weber Cook book or the BBQ bible by Steve Raichlen.
