I wanted to know what sponsorship/letter requirements there might be for her to visit me here in the US? How long would it take to get approval?

I never found any way of bringing my brazilian then girlfriend over apart from a fiance visa. If you're serious enough to consider getting married, it's probably the way to go. If you don't at least have a civil ceremony in 90 days she'll have to leave. A tourist visa would probably be hard from the PI, and could cause big problems if she gets over here and you decide to get married.
