Chicken Fajitas
4 chicken breasts
3 bell peppers (1 of each color: green, red, yellow)
2 onions
2 tomatoes
seasoning salt
wash and clean the chicken breasts
cut them into 1 inch pieces... or however big you want them
slice the veggies... whatever size you want them
pour the seasoning salt over the chicken and let it sit for a few minutes making sure its all over the chicken and not just on top
throw the chicken in a teflon pan and let it cook for about 5 minutes... add the veggies... and stir a few times...
cooking time after that should be about 10 minutes or until chicken fully cooked.
its easy and delicious... serve with tortillas and sour cream on the side...

I made tuna melt sandwiches. For every 2-3 open face sandwiches mix:
1 can tuna (small)
Miracle whip or mayo to taste. (about 1/4-1/2 cup)
2 Tbl minced onion
2-3 Tbl celery chopped small
1 hard boiled egg-chopped
salt & pepper to taste
Toast bread and put about 1/3 cup mixture on bread. (More or less to suit you) Top with slice of tomatoe & American cheese. Put on cookie sheet and bake at 350 for about 10 minutes or till cheese melts and is bubbly.
Add a bowl of soup if you like. 20 minutes, start to finish and hot too.
