I think spinach would be a complimentary vegetable to go along with manicotti. You could make a spinach pie which is very tasty and simple to prepare, just boil the spinach and add bread crumbs, grated cheese, garlic powder and one egg, (taste t to see if you added enough bread crumbs,etc.) mix it all together and put into greased pan, cover top with a light coating of bread crumbs and bake 25 mins. 375 oven. Deliziosa! Another great vegetable to serve with manicotti is stuffed mushrooms or stuffed artichokes which are both easy to make. You can also add an Antipasto with plenty of salami, cheese, and pepperoncini and pure olive oil. Ohhhhhhhhh I'm ready for your dinner! Best of Luck!

Satueed Spinach
This is based on a mediaeval recipe, which may itself have come from the near east. Spinach cooks down rather alarmingly-- one pound of spinach will give you only three or four decent-sized side portions
Ingredients
1 pound of fresh spinach
2 Tbsp. olive oil
1 Tbsp. honey
1 tsp. lemon juice
2 tsp. garlic
2 tsp. ginger
a pinch of salt
a pinch of black pepper
Directions
Pick through the spinach and wash it. Dry it as well as you can; the more water you get out, the better it will cook.
Spread the oil in the bottom of a large skillet. Spread the lemon juice and honey over the oil and sprinkle the spices on top.
Add the spinach, as much as you can at a time. Cook it over moderate heat, stirring continuously. The spinach will cook down; as it does, add more spinach and keep stirring.
Cook until all the spinach has wilted. Some of the spinach will turn brown, but this is all right.
Serve it at once as a side dish.

I like to serve zucchini with Italian dishes. You can cut into pieces, saute in olive oil, add fresh garlic and a sprinking of basil. I have even added grated parmesan. Spinach is also another good side dish with pasta dishes.

get some of those tasty grape tomoatoes, cut in half, dice up a purple onion, salt pepper and diced flat leaf parsley. Then throw some Italian dressing on it...yumm!

Try a tomatoe mozzarella salad with balasmic vinegar, olive oil, salt and pepper and fresh basil. To add color try the yellow tomatoe with it too.

i would just serve a salad and bread with that. i dont know many people that sever pasta along with a vegtable because pasta tends to be a meal itself.
