What vegetable could I substitute with Broccolli & Cauliflower? My fiance does not care for broccolli or Cauliflower and Asparagus is out of the question as well. Peas are not a favorite either.

Scalloped Green Beans

A tasty green bean casserole recipe with cheese.
INGREDIENTS:
3 cups cooked and drained green beans (use canned, frozen, or fresh cooked)
2 tablespoons butter
3 tablespoons flour
1 cup milk
1/2 cup shredded Cheddar cheese
1 tablespoon prepared mustard
1/2 cup liquid from drained green beans
1/8 teaspoon pepper
1/2 teaspoon salt
1/4 cup bread crumbs tossed with 1 tablespoon melted butter
PREPARATION:
Cook beans; drain and reserve 1/2 cup of cooking liquid (Heat through if using canned beans). Melt 2 tablespoons butter in a saucepan; blend in flour. Add milk slowly and cook until thickened, stirring constantly.
Add cheese, mustard, and reserved cooking liquid. Stir until cheese melts. Add salt and pepper. Place alternating layers of green beans and sauce in a greased casserole, then top with buttered crumbs. Bake at 350° for 30 minutes.

Glazed Carrots

INGREDIENTS:
4 medium carrots
2 tablespoons butter
2 tablespoons sugar
mint or thyme, optional
PREPARATION:
Wash and scrape carrots. Cook in boiling salted water until tender. Drain. Cut in slices. Melt butter. Add sugar. Add carrots. Cook until slightly browned and glazed. Add a teaspoon of chopped fresh mint leaves or thyme to the butter and sugar mixture, if desired.

The substitutes depend somewhat on what you are cooking.
Onions, cabbage, zucchini, mushrooms, turnips, tomatoes, celery and don't forget carrots, just a few more vegetables to try.

Carrots, turnips, green beans, spinach, collards or kale, mushrooms, celery, potatoes...not quite sure what kind of dish you want to sub them in.
