You are more likely to get salmonella than bird flu. Even with your additional comments (ie it comes into your kitchen raw), do you not properly clean your preparation area and utensils afterwards in the fear of E.coli, Salmonella etc and not just bird flu? As is the same with most food borne pathogens, appropriate cooking will kill the virus.
I would not be afraid to eat turkey, but as with all meat I would buy it from a good butcher who can tell you exactly where it came from (as suggested by a previous answerer).

Also, the bird flu the turkeys have had not crossed into humans in the UK; it is an avian virus.
Re your additional information, are you saying you eat raw turkey?

All animal products are unsafe to eat.
You are putting yourself at risk from infection with EColi, BSE, Salmonella, Bird flu, worms,..
as well eating meat infected with tumors and cancer...also you are digesting harmfull carcinogenic steroids and chemicals.

If the turkey is cooked (to at least 190 degreesF) -- that is supposed to kill off any viruses. Viruses are just collections of proteins and carbs and get destroyed by heat.
