Simple...
1 large egg
1 cup of flour
1 cup of milk
1 tablespoon sugar (brown or white)
2 tablespoons vegitable oil
3 teaspoons of baking soda
1/4 teaspoon salt

Combine all ingredients and mix together just enough to combine
do not over mix, or cakes will be stiff or hard, let the batter stand for a few minutes while your griddle or skillet heats to about 350 degrees. (It is hot enough when a drop of water dances around)

drop about 1/3 cup of batter on griddle, when the bubbles stop raising flip it over until golden on both sides, don't overcook, look under the edge with a flipper, when golden flip over...place on a plate and cover with a clean cloth or dish towel while waiting for the others to cook....the steam from the hot cakes will keep them fluffy... Heat yourself some syrup, slap on some butter and dig in.

For thin pancakes (crepes) take 4 ounces flour and make a well in the centre. Break an egg into the well and beat into the flour. Gradually add half a pint of milk beating well all the time. Season if the pancakes are going to have a savoury filling, not otherwise.

Pan (10 to 12 inches across) really hot with a very little fat to stop the beastie from sticking. Pour in just enough of the batter to cover the base of the pan. Cook for about 30 seconds and then lift up to check that the bottom's cooked but not burnt. At this point you can either flip the pan and get the pancake to land uncooked side down or you can turn it with your spatula and cook the other side.

Traditionally served with lemon juice and sugar or golden syrup. Yum.

(This recipe will make about 10 - 12 pancakes).

These are great pancakes..my family loves loves em!


Blueberry buttermilk pancakes

2 cups all-purpose flour
1/4 cup whole wheat flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 large eggs
4 tablespoons melted butter or oil
2 cups buttermilk
1 1/2 cups frozen blueberries
additional water if required

Mix the dry ingredients together in a large bowl.
Mix the egg, butter, and buttermilk together in a small bowl. Make a depression in the dry ingredients and add the liquid mixture. Stir until moistened—some lumps will remain. Add more water to get the right consistency, if required. Do not over mix.
Gently stir in the blueberries, stirring only until dispersed.
Pour about 1/3 cup of batter onto a hot, lightly greased griddle. Cook for about two minutes on medium heat or until the edges are set and the bubbles begin to cook into open craters. Turn over and cook on the other side.

Gingerbread pancakes. Yummy
3 cups all-purpose flour
1 cup packed dark brown sugar
1 tablespoon baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/2 cup water
1/2 cup brewed coffee, cold or at room temperature
4 large eggs
1 stick (1/2 cup) unsalted butter, melted and cooled
1/4 cup fresh lemon juice
Vegetable oil for brushing griddle
Accompaniment: pure maple syrup




Whisk together flour, brown sugar, baking powder, baking soda, salt, and spices in a bowl. Whisk together water, coffee, eggs, butter, and lemon juice in a large bowl. Add flour mixture and whisk until just combined. Let stand 15 minutes (batter will thicken).
Brush a griddle or 12-inch nonstick skillet with oil and heat over moderate heat until hot but not smoking.

Working in batches of 3 or 4, pour 1/4 cup batter per pancake onto hot griddle and cook until bubbles appear on surface and undersides are lightly browned, 1 to 2 minutes. Flip pancakes with a spatula and cook until cooked through and edges are lightly browned, 1 to 2 minutes more. Transfer to a platter and loosely cover with foil to keep warm. Brush griddle with oil between batches.

Makes about 18 pancakes.
