I don't know if you have been making Slimming World chips but i swear by them. To be allowed chips on a diet - fabulous!!
1. Peel the potatoes and chop into chips.
2. Boil to chips for 8-10 minutes.
3. Strain the chips and blot dry with kitchen roll.
4. Place on an oven tray already sprayed with Fry Light and spray the chips also.
5. Oven cook for 25 mins. (you may want to 'shake' the chips during this time.
Another potato recipe i loved was Potato Wedges:
1. Mircowave a jacket sized potato for half the recommended time (approx 3 mins)
2. Cut the potato into wedge shapes
3. Cook the wedges in the same way as the chips (with Fry Light) for 20 -25 mins.
Yummy!!! and have as much as you like on a green day.

I was just looking at the Jan/Feb issue of Slimming World magazine and the following caught my eye: -
Pork & Red Pepper Goulash - serves 4 - Can be frozen
Ingredients
12 shallots (suppose you could use ordinary onion)
2 Cloves Garlic
2lb Pork
2 Red Peppers
Fry Light oil
1 Bay leaf
2tsp Paprika
400g can chopped tomatores
7fl oz/198ml beef stock made with bovril
salt and freshly ground back pepper
Chopped fresh parsley to serve
Method
1. Prepare the ingredients, peel and halve the shallots, peel & finely chop garlic, remove all visible fat from pork & cut into bire sized pieces, deseed and roughly chop peppers.
2. Spray a flameporoof casserole dish by fry light and place over medium heat (on top of stove i presume - doesn't say). Add shallots and fry for 2-3 mins. Add garlic and bayleaf and cook for further 2-3 mins. Add paprika, pork and peppers and cook for another 6-8 mins before puring in the tomatoes and stock. Bring to boil, season and cover tightly.
3. Reduce heat to low and cook gently for 2 hours or until the port is metlingly tender. remove from heat, stir in chopped parsley before serving.
