Plain Griddle Cakes (pancakes from scratch)

sift:
one cup flour
2 teaspoons baking powder
one-quarter teaspoon salt (not needed)

beat and add:
one egg (optional)

add:
1 cup milk (scant)
stir gradually to make smooth
add:
1 teaspoon melted butter or oil

cook in a hot frying pan, flip pancakes when they bubble, to brown the other side.

Serve with Vermont maple syrup.

* 1 egg
* 1 cup buttermilk (I use regular milk with 1 teaspoon vinegar added to substitute for buttermilk---sounds gross, but it works)
* 2 tablespoons melted shortening or salad oil
* 1 cup flour
* 1 tablespoon sugar
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
~~~Beat egg and then add remaining ingredients in order listed. Beat until smooth. Heat a greased or non-stick griddle (to test if it is hot enough, flick a few drops of water on it, if they skittle around on the surface, it is at the right temperature).
~~~Pour batter into puddles about the size of your palm. As soon as they are puffed out and full of bubbles (when the bubbles just start to burst), flip them over and cook the other side for a slightly shorter period of time. Pancakes should be golden on both sides.
---Serve with maple syrup.
(this makes about 10 pancakes)
