They have basically the same ingredients but fajitas are the ones where you fill them up as you go along from the different plates on the table.
Enchilladas are where everything is wrapped up in tortillas and covered in a tomato based sauce and cheese and herbs and baked - a bit like italian canneloni.
Best way to see the differences in mexican food is to try making it yourself. The meals are very easy to make especially with old el paso of something like that.
Yummy tip: use spam as the meat in fajitas. I don't like spam as a rule, but it is just divine in fajitas.

I would only add that amongs the sauces for enchiladas you are not limited to mole, you can use a tomato-onion-garlic-chili sauce, a green tomato-onion-coriander-garlic and chili sauce, an "amarillito mole", a green mole sauce and several others; of course, only corn (maize) tortillas are used. "Fajitas" in Spanish mean "little strips" and refer to the way the meats, bell peppers, tomatoes and onions are sliced and "fajitas" is merely a combination of ingredients that are pan fried and eaten, some times as a filling of a wheat flour tortilla. Further, "enchiladas" is a typical Mexican home cooking dish, whereas "fajitas" is some sort of quick party expedient mainly in northern Mexico and southern USA.

Fajitas are beef skirt steak, usually prepared on a bbq grill with bell peppers and onions. You grill up the long steaks and slice them into think strips/ You can make great fajita tacos with flour tortillas, fajitas, a touch of guacamole and pico de gallo or salsa. Thats how we do it in Texas.

Enchiladas are ground beef wrapped in CORN tortillas smothered in a chili con carne and topped with melted cheese. Usually theres 3 different kinds of enchiladas. Ground beef, shredded chicken, or cheese. Theyre all in corn tortillas and baked. Like a casserole.

To whoever said that Mexican food is all the same, just folded differently is obviously ignorant to southwest cooking. Fajitas are definately a Tex-Mex creation founded by barbequeing the tougher, cheaper, low-quality skirt steak that no one wanted to purchase in the first place, by cowboys and Mexican vaqueros on working ranches around South Texas. Enchiladas are Spanish cuisine adapted to Mexican culture, now to Tex Mex cuisine, and are even more authentic Mexican food than fajitas.

fajitas are where you fry chicken, onions, peppers, chilis, spices etc then put them in a flour wrap which has been heated in the microwave

enchiladas are chicken in a tomato sauce and spices wrapped in tortillas with grated cheese on top baked in the oven.

now I've said that they sound very similar but they actually taste totally different.
