What do you all think would be a good dinner I could make my guy for Valentine's Day? I am a pretty good cook and have quite a few recipes, but I want to do something different. Nothing yet has caught my eye. Anyone have any insight? And, if you could provide some recipes, that would be wonderful.

A couple of these sound appealing. I guess I should clarify that I am looking more towards the gourmet. It doesn't have to be easy, just delicious.

Asian chicken with home made fried rice, Artichokes with lemon butter or a side salad and pomegranate martinis or sake.
For dessert, strawberries dipped in chocolate and champagne.

Chicken:
Pound 2 breasts thin and either saute, grill or bake 'til done.
Sauce to pour over chicken:
1/2 c. chunky peanut butter
1/2 cup milk
1 T fresh finely grated ginger
3 T soy sauce
1 t sesame oil
1 T roasted minced garlic
1/2 t red pepper flakes
3 T rice vinegar (I didn't have that so I used a just splash of regular white)
1 T chopped scallion
Whisk this stuff up 'til combined
Fried rice:
Saute up some 1/4 c. onion, 1/4 c. pepper (I like red or yellow), some matchstick bits of carrot and bean sprouts, mix in 1 c. cooked rice (I use brown) and stir in a beaten a beaten egg.
Set the chicken on a dinner plate with a mound of fried rice and drizzle the sauce over both items.
I made this the other night and it was really, really good. In fact, I'm making it again tonight!!

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Try a roated chicken and potato dish.
Here is a quick description, chicken breasts, peeled and halved potatos, onions Put ino a large roasting pan, pour over with a olive oil sauce made with, paprika, black pepr and salt.approx 1 cup of olive oil or enough to cover base of pan and a little bit more. Roast potato, chicken and oinion until potato and chicken are cooked.
Put potato and chicken on a plate, pour remian sauce into carrafe and pour over chicken potato (and for those who like onions as well) Serve with garden sald, nice white or rose wine. A nice Zundafel is my prefernce.

Breaded Veal cuttlets and port wine mushroom sauce.Marinate
veal cutlets in port wine. When ready to cook, lightly flour veal and cook in pan, until 2/3 cooked.Remove veal onto seperate plate, add dicced mushrooms to pan, add port wine cook until mushrooms soft, add veal back in pan to finish cooking. Serve with rice when complete.

Rapini is an alternater vegetable that can be served with either one of the above.
