Mayonnaise was supposedly invented in 1756 in France by Duke de Richelieu's chef (whose name has sadly been lost in the march of time). This chef was preparing a victory dinner in honor of the french capture of the spanish city, Mahon. The chef was trying to make a sauce of cream and eggs, but had no cream. So he substituted olive oil for the cream and tada mayo. According to legend he named the new sauce Mahonnaise in honor of the victory. The sauce got its present name of mayonnaise because of a printing error in an 1841 cook book. The first ready-made mayo was Hellmans (debuted in 1912), Miracle Whip has been around since 1933.
