I'm really not a good cook so something easy would be nice. She really likes chicken and italian (but no alfredo)

Aww.. you're soo cute!

How about spaghetti with grilled chicken? You can get precut grilled chicken bites at most grocery stores and all you have to do is put the chicken in with the tomato sauce and let it simmer(make sure you get the pre-cooked chicken!) That way you can share, and wipe the sauce off her chin(very romantic!)

Here's an easy Italian chicken dinner, called Chicken Cacciatore (kah-chah-tory). You will need:

1 package boneless chicken breasts (about 1-1/4 lbs.)
1 medium or large size jar red spaghetti sauce, any kind except meat
1 16oz. box any type dry pasta
1 container grated Parmesan cheese (Kraft)
1 bag any type salad greens
1 bottle any type salad dressing
1 loaf Italian bread from your store bakery
butter or margarine for the bread
1 bottle pink or red wine, any kind you like (if pink serve chilled, if red serve room temp.)

Place the chicken in a baking dish, glass if you have one, otherwise metal is OK. Cover with spaghetti sauce (save some for the pasta), cover with foil, and bake at 350 degrees in the oven for 1 hour.

While the chicken is cooking, put the salad greens in a bowl and either add dressing or serve it on the side. Slice the bread and serve in a napkin-lined basket if you have one, otherwise a bowl or plate is fine. Set the table with flowers and candles if you have them. Warm up the rest of the spaghetti sauce in a pan on the stove, or in the microwave in a micro safe bowl for 20-30 sec. on high. Serve this in a pitcher or small bowl. Make sure the grated Parmesan and butter or margarine are on the table as well.

When the chicken has 30 min. left to cook, fill a big pot with water and add a little salt. Bring to a boil and add the pasta, boiling gently till done "al dente", which means till it's just soft enough but not mushy, and stirring occasionally. You will have to try one to see, it should take about 15 min. When it's done, drain and return to the pan, stirring in a little butter or marg. so it won't stick together. Then transfer to a serving bowl.

When the chicken is done, if you have a big plate or platter serve it on that. Otherwise, you can also set the pan directly on the table, making sure to use a trivet or hot pads. Pour the wine, and dinner is served!

Any leftovers are really good microwaved the next day, or you can also freeze leftover chicken in a tightly sealed plastic container.

Olive Garden is not a good idea...unless she absolutely adores it...forget it, because it is a crappy chain restaurant...same goes for Giordano's (it's that pizza chain right?)...if you only have a limited budget and this is why you're left with these 2 options then scratch them and cook her dinner (way more thoughtful and romantic) and take her out for a really great dessert after or just take her out somewhere nice for appetizers ... get a bunch to split!

Go to the supermarket and in the frozen food section is Bertolli Dinner for Two (it's in a blue bag)...they have shrimp scampi along with all kinds of Italian dishes that are really amazing in flavor!! She'll think you ordered it from a restaurant! Deelish! Then go to the bakery dept. and pick up some fresh baked Italian or French bread and voila! dinner for two!

Pollo (Italian style):
1 whole chicken
3 peppers
3 tomatoes
3 zucchini
100grams black olives
1/2 glass olive oil
salt
-cut the chicken in 8 parts
-deep fry with olive oil
-add salt and pepper
-fry until golden then
-add pepper & zucchini
-mix and cook for 45 minutes then
-add black olives 5 minutes before cooking ends.

Then you can cook an easy pasta like spaghetti or lasagna or baked macaroni. or else
ravioli, tagliatelle with seafoods.

And don't forget the dessert and the wine.

Mm. How about grilled chicken on top of some spaghetti? Sounds yummy. For dessert, cheesecake !

chicken with campbell mushroom soup sauce. Add some mushrooms to the sauce and dilute with cream (for added richness). Serve with a green salad and crusty french bread.
