Dark chocolate souffle cake with raspberries:
½ cup Granulated sugar
½ cup Packed dark brown sugar
¾ cup Water
2 tablespoon Instant coffee granules
⅔ cup Unsweetened cocoa powder;, (Dutch process)
2 ounce Semisweet chocolate
2 ounce Unsweetened baking chocolate squares
2 tablespoon Kahlua
3 large Egg yolks
⅓ cup Sifted cake flour
6 large Egg whites; at room temperature
¼ teaspoon Cream of tartar
⅓ cup Granulated sugar
½ pint Fresh raspberries
Preheat oven to 300. Coat bottom of a 9-inch springform pan with cooking spray. Set aside. Combine 1/2 cup granulated sugar, dark brown sugar, water, and instant coffee granules in a large saucepan; stir well and bring to a boil. Remove from heat. Add cocoa and chocolates, stirring with a whisk until chocolate melts. Stir in Kahlua and egg yolks. Stir in flour; cool to room temperature. Set aside. Beat egg whites and cream of tartar at high speed of a mixer until foamy. Add 1/3 cup of granulated sugar, 1 tablespoon at a time, beating until stiff peaks form. Gently fold one-fourth of egg white mixture into chocolate mixture; repeat with remaining egg white mixture, one-fourth at a time. Spoon into prepared pan. Bake at 300 for 1 hour or until a wooden pick inserted in center comes out almost clean. Cook completely on wire rack. Remove sides of pan. Garnish with raspberries.

I think a chocolate mousse or souffle w/ a fresh raspberry coulee (sauce) would be very nice, rather than tryint to do layers. Put sauce on the place, serve the chocoalte concoction, then toss on a few fresh strawberries for garnish.

White Chocolate Raspberry Cheesecake from Santacafe
Ingredients for the crust:
2 cups graham cracker crumbs
1 cup slivered blanched almonds
1/4 cup clarified butter in its liquid (unchilled) form
Ingredients for the filling:
8 ounces fine-quality white chocolate
4 8-ounce packages cream cheese, softened
1/2 cup plus 2 tablespoons sugar
4 large whole eggs
2 large egg yolks
2 tbsp. all-purpose flour
1 tsp. vanilla
2 pints raspberries
Directions for the crust: In the food processor blend together the graham cracker crumbs and the almonds until the almonds are ground fine; add the butter, and combine the mixture well. Press the mixture onto the bottom and two-thirds of the way up the side of a 10-inch springform pan.
Directions for the filling: 1. In a metal bowl set over a pan of barely simmering water, melt the chocolate, stirring until it is smooth, and remove the bowl from the heat. In a large bowl with an electric mixer beat the cream cheese until it's light and fluffy; add the sugar, and beat in the whole eggs and the egg yolks, one at a time, beating well after each addition. Beat in the flour and the vanilla and add the melted chocolate in a slow stream, beating until the filling is combined well.
2. Scatter the raspberries over the bottom of the crust, pour the filing over them, and bake the cheesecake in the middle of a preheated 250°F oven for 1 hour or until the top is firm to the touch. Let the cheesecake cool in the pan on a rack; chill it, covered loosely, overnight, and remove the side of the pan.

Raspberry Meringue Kisses
3 egg whites
3½ Tbsp. raspberry Jell-o
3/4 cup sugar
1/8 tsp salt
1 tsp white vinegar
1 cup semi-sweet chocolate chips
Line two cookie sheets with brown paper (grocery store bags work great) and preheat oven to 250ºF
Beat egg whites (medium speed) until foamy. Slowly add Jell-o and sugar 1 Tbsp at a time. (This will take awhile. Don't add more until the spoonful you just put in is completely mixed in.) Add salt. Continue beating and add vinegar. Beat until peaks are forming. Stir in one cup of chocolate chips.
Drop by teaspoonfuls onto cookie sheets. Don't make them too big or they won't dry properly. Place in oven at 250ºF for 20 minutes. Shut off oven and leave overnight w/o opening the door.

Sorry that I can't give you a recipe - (except I'm sure you've thought of Black Forest Gateau?)
But why not make a chocolate mousse, using very expensive chocolate (like Menier in the green wrapping), serve it in a little pot (or a teacup) on a large white plate. Then drizzle delicious raspberry coulis on the plate and some chocolate powder....it looks divine and taste even better.

Have fun with Raspberry Truffles:
In a small metal bowl add 2 cups of chocolate chips. In a larger bowl add boiling water and place the metal bowl in the boiling water. The chips will begin to melt. Once they are nearly melted add 3 tablespoons of chilled whipping cream and continue to stir. Once its all melted set the metal bowl to the side and change the boiling water for cold water. Continue to stir and add in a tablespoon of your favorite liquor such as rum.
On spread out saran wrap spoon teaspoon sized chocolate on it. cover the chocolates with another layer of saran wrap and press around the chocolates forming small pockets. Place this flat into your fridge for 30 minutes.
In a blinder place one cup of raspberries and a tablespoon of sugar. (less if you would like) Puree it and set in the fridge.
Once the chocolates are cold and stif use the saran wrap to mold it into a ball. Using two spoons around the outside of the saran wrap help. Open the saran wrap and roll the chocolates in powered sugar, powered chocolate and or your favorite nuts. Place these balls into a bowl and drizzle the raspberry sauce on top. Or keep the sauce in a bowl for dipping!

How about looking at www.bbc.co.uk/food for the BBC food website. Another good site might be Delia Smith - just google her name. Have you tried an internet search and not come up with anything? How about going to a bookshop and looking through the books to see if you can find the recipe? Good luck - it sounds yummy!
