Use sausage meat with a lower water / fat content and cook at a lower temperature for longer. You would be better advised to go to a reputable butcher and buy his in house meat as supermarkets meat nearly always have added water / fat

For sausage patties, use your spatual or a knife and cut a little 3/4" slice into the edge, towards the center of the slice. For links, make diagonal slashes about 1/3 of the way deep into the links, so it will not have to split, but can give off it's juice form the cuts.
