I too, don't like drinking/clubbing however I love dancing so everytime I'm down there, I always visit the local Jazz clubs as well as the comedy clubs. It's not really a prereq that you drink in those places, more just about enjoying yourself either by yourself or with your friends -

Read books, research on the internet to widen your knowledge about things that interest you, develop a hobby, join a club and / or a class or 2, so you can meet interesting people, improve other skills such as writing, take in part-time work to do at home, or get a 2nd job, spend time improving your appearance, use your digital camera to take lots of interesting photos... build up your music collection using a free download service EG. Limewire... Coo! The list of possibilities is endless!!
Get active. Help pressure groups & charities...
Hey come on! Use your time to good effect!

Well, you've told us what you don't do, but how about telling us what you do enjoy doing?
That will help a lot, because your interests are going to have a lot of influence in determining your options (that isn't to say you can't try something new!).
If you like film, for example, there are film groups designed for those 21-30 or so.
There are also many different types of clubs, bars, and lounges. They're definitely not all the same, and some are great places to see live bands on certain nights. You can even go and not partake in any of the drinking. Bars, clubs, and lounges also vary in the types of music they play. for example, if you're into dancing, or even just curious, places like S.O.B's offer salsa lessons on certain nights. And there's always comedy clubs.
I rarely drink (haven't had one in about 3 years), but I sometimes enjoy going to clubs or out for karaoke, or just to see concerts.
So, basically, there are a lot of events going on in NY, but it depends on what your interests are. Good guides with event calendars to check out are Time Out (partially online), The Village Voice (also online), and New York Magazine (also online). The Daily News also tends to list events for that day. http://nyc.flavorpill.net/ is also kind of good sometimes.
You might try jotting down say, 5 things you love to do or are interested in trying and then look through some of those sites and publications and see what's in tune with the list you've made.
