i normally use pitted dates, orange peel finely chopped, a hint of aniseed liqure, some water and put the mixture into crust pastry and either bake them or fry them till golden brown.

For the pastry
400 gr plain flour
100 gr margarine
1 egg
75 gr sugar
1 teaspoon Baking powder

For the filling
400gr pitted dates
Grated orange and lemon zest
1 teaspoon brandy / aniseed liqure

Start off by making the pastry since this would require a minimum resting time of 2 hours.

Sift the flour and baking powder in a large bowl and rub in the margarine. In another bowl, whisk the egg and sugar together until the sugar is slightly dissolved. Next add it to the flour and form your dough.

Wrap your dough in a plastic bag and allow it to rest in the fridge for a minimum of 2 hours.

Now, to make the filling, place the dates into a bowl and add 2 tablespoons of hot water. Mash the dates with a fork until they are softened. You can also place the dates and water over a medium heat to melt more uniformly. Now add the zests and brandy/aniseed liqure and mix through.

To make the Imqaret, roll your pastry out into thin strips, roughly 4 inches wide. Now place a small amount of date in the middle and brush the edges with water. Once the strip has been filled with dates at equal intervals, fold the pastry over and cut out each maqut individually. Press the edges together to keep the filling inside and deep fry in hot oil. or bake in oven

Once the Imqaret are ready, eat immediately. You may sprinkle a little icing sugar for presentation.

Brown sugar
Oats
Butter, melted
Touch of salt.
Stoned dates
Orange juice

Mix oats, sugar, butter, salt together to make a stiff mixture.

Press half into the bottom of a baking tray - about 1/2 in thick.
Simmer dates and orange juice until dates are soft.
Drain and then pulp date mix and spread over the oats
Cover and press down the rest of the oat mix.

Bake in the oven 180 deg C approx 30 mins. Cool and slice.

Wrap the dates in bacon and grill, this makes a tasty hors d'oeuvres.
